I got distracted by the dishwasher last night and forgot to pack up dinner leftovers, so it's the back-up plan lunch:

Tomato-red pepper soup, cherries, and crackers.

Raw spicy carrot-avocado soup from my vitamix. I'm not a particular raw aficionado, but this soup is really nice: spicy, creamy, filling and ready in only a few minutes.

I'm eating this at home, but you could definitely make it in the morning and bring it to work in a cold thermos.

I've been really lazy lately, so I'm super proud of myself for packing food today.

I have:

morning snack = sunbutter & a peach
lunch = The Bowl! brown rice, chickpeas, broccoli, carrots, cauliflower with AfR romesco dressing & extra toasted almonds. mmmmm.
more snacks for later = plain popcorn, kiwi

I need to stop being lazy. I am so much happier when I have awesome snacks with me than when I'm bored/crabby at work and going "...wish I had a snack..."

Cornelie, is that recipe in the vitamix book, or online somewhere?? It sounds awesome! I haven't done soup in my vitamix yet, but cold soup sounds right up my alley! (Except for gazpacho which I do not like...)

I was inspired by this video: http://www.youtube.com/watch?v=uzcGCe_lo5s

I think mine was something like 1 cup water, 1 1/2 cup carrot pieces, 1/2 of an avocado, 1/2 tsp of ginger and lemon juice, pinches of salt, chili powder, black pepper and dried thyme. Blend for 30 seconds until smooth.

If you google raw carrot soup recipe, you'll find lots of other recipes, most of them more spicy than mine.

I have Arabian lentil and rice soup (from Appetite for Reduction) with me, and a very brown half of an avocado that I'm hoping will look alright once I scrape off the brown bits to have on crackers! Plus some fruit and almonds for snacks.

German potato salad and sesame tofu. Plus we have gazillions of just-harvest cukes at work, so I'll probably eat one of those with the hummus we have a huge tub of as well. I'm finally starting to really enjoy packing lunches!

We have costco tubs of hummus at work, so I feel compelled to eat it for lunch every day. So, I'm taking carrots and some cut up fruit. Granola and peanuts for morning and afternoon snacks.

Loads of peanut butter-ginger-orange hummus with red bell pepper and carrots for dipping. Ate it straight out of the food processor, standing by the kitchen counter.

The most basic thing ever (I really need to go shopping!), so I can't even call it a scramble (and it has cubed tofu, too):
Caramelized onions + garlic + smoked tofu + leafy spinach (seasoned w/ salt, pepper, ginger and nutmeg).
And a mango/orange/peach smoothie.

Oh, and I found some vegan gummy sweets in my desk drawer. :)

Yummy sandwich! Sesame pita pocket with half an avocado stuffed in, spinach, arugula, red pepper hummus, and marinated/baked tempeh! With a side of wheat thins too.

Easy lunch today. I have some Stahbush (?) frozen black beans and rice. HEated it up with some frozen corn. Added it onto big bowl of greens with dollop of sour cream and spicy ginger dressing. Really yummy. I love those frozen rice and beans in a pinch. They're really good.
