I made what are probably my most healthy pancakes ever: spiced pumpkin date pancakes made with spelt, flax and quinoa. Adding cooked quinoa to pancakes is something I've been wanting to try for a while and it made the pancakes so filling!

I usually have chocolate chip pancakes on sundays, but today is a busy day so I'm having iced donut flavored coffee now, then some cheezy grits with daiya in a bit.

Our CSA has been padding our boxes with frozen strawberries from last year (while this year's strawberries take their time) so I've been really enjoying smoothies with the berries, frozen mango, soy milk, and nooch (weird, but it works!). I have a really fancy b-day gift artisanal maple syrup which I've been adding a dash of to it as well. I always eat toast too.

Those FFL GF english muffins have grown to be my Favorite Thing for breakfast. I slather them in EB and PB and eat with coffee.

Today however I am having an apple almond muffin from Wildflour vegan bakery and coffee for breakfast. Well, I WILL be having. My muffin is getting warm and cozy in the oven first.

We made biscuits and gravy for breakfast. I made some spelt biscuits that I saw on allrecipes.com and they were awesome. Between those and the navy brean gravy from VB it was the healthiest b&g I've ever had, as well as delicious.

I'd been eating Crock Pot Steel Cut Oats of the Vanilla variety with peanut butter and banana every day for MONTHS happily. Then I stumbled upon chocolatecoveredkatie.com's method for using agar to make pudding (http://chocolatecoveredkatie.com/2008/1 ... -one-many/) (I alternate between agar/almond milk and agar/lite coconut milk + almond milk) every day. Well, actually, I make it every three days and eat a third of the pudding with two T. of my protein powder mixed in (Navita's Superfood Blend- Hemp, Cacao, Maca- is my most recent fave). Pudding. For Breakfast! Yeah, I'm a huge fan.

Toasted whole wheat bread with almond butter and strawberry jam, and coffee. Then I walked to the farmers market and ate blueberries on the walk home.

I had strawberries, chia seeds, a banana and a little bit of oats mixed in with coconut sugar, cinnamon and maca. AND some yerba mate.

Yesterday I made a fruit salad and ate half, and I ate the rest this morning for breakfast. Nectarines, raspberries, and grapes. Only the good stuff. None of those weird canned mandarin orange slices, or filler fruits like banana.

A "Peanut Toffee Buzz" Clif bar. It was delicious (definitely one of the best flavors, imo), but I was silly and didn't read that the label says "contains caffeine" (and, sillily, didn't realize that the "buzz" refers to the caffeine in it), so I mistakenly paired it with a big cup of black coffee and was definitely buzzing for a while after that.

It was a really bad allergy morning so I had scrambled jalapeño tofu doused with chipotle sauce. It helped some to clear up my sinuses, but I still didn't stop sneezing.
