So, one of my mom's friends just got diagnosed with celiac and is SUPER sad about it. It would be nice to bake some treats to cheer her up, but I don't really want to buy new ingredients.
Off the top of my head, this is what I have to work with: xanthan gum guar gum corn flour cornmeal (coarse, fine, blue...) tapioca flour cornstarch peanut flour white rice flour brown rice flour chickpea flour almond meal
What can I make with that stuff? I have all the other usual baking suspects, although I'm low on EB and would rather not buy any right now ($$).

You can make really good cookies with a combo of almond meal, brown rice flour and tapioca flour with a little xanthan and use canola oil. Almond meal makes everything delicious!

Do you have any favorite recipes? Talk to me like I'm an idiot, because I've never attempted gluten free baking before and do not trust myself to de-glutenize anything. I'm afraid I'll end up with rocks.
