LaurenL, do you have international food markets near where you live? They should have creamed coconut there. The thing with it is, it thickens more than regular coconut milk does, so it's really best for most of the uses in this book, especially the cheese and sauce for the mango wraps.
Also, I'm sad to report some instructions are missing from the Unfishwich recipe. Boo hiss, I'm so sorry about this.
The sticks don't just bake for 10 minutes, this part is missing from after the point the butter sauce is prepared:
Flip the sticks over and bake for another 10 minutes. Transfer the sticks to a shallow baking pan and drizzle the butter sauce over them. Set the oven to broil. Broil the sticks for 2 to 3 minutes, until golden brown.

For some of them, I did take them to work but just changed my transportation method slightly - put the filling in an old margarine tub and the bread/wraps separately and constructed them at work.

The cheese recipe for the Pesto Pizza is outstanding! Made it with coconut milk and it still came out a winner.

I made the bean & nut burger recipe - I really like them! I had to squish them down so they were very thin in order to get them cooked enough for me. But that was fine. They were so easy to make.

Green monster bread smells and looks so good. I'm excited to make sandwiches, but trying to be patient.
I made the almond red pepper hummus from EDBV to go along with it.
I'll be going shopping sometime this week, so I'll plan to try some of the sandwich fillings.
Has anyone tried making this bread in a bread machine? For the first time, I didn't want to stray from the recipe, but for the future, I'd rather do it easy in the machine.

Even if I never make anything else from this book, ever (I will), the bread recipe is worth the price of the book.
This is one freaking amazing sandwich, in no small part because of this bread. You can taste the spinach, and it's the softest, nicest sandwich bread imaginable.
I'll add that I am by no means an expert bread baker. I use the bread machine! But ainfollowed all the directions, using the KitchenAid, and it came out absolutely perfect. It wasn't as quick and lazy as the bread machine since there was more cleanup, but it still only took about 20 minutes of active work.

My copy arrived yesterday! The Orange Fennel Summer Rolls look delicious, but I think I might do the napa/scallion variation. In that case, Apricot Fennel Sandwiches might be better to try first. We'll see.

My book came yesterday as well, I made the curried lentil wraps for dinner tonight. They were really toothsome and satisfied the savoury craving i'd had since reading the recipe last night.

I have three recipes on the meal plan next week--it's the first week of school so I want things that'll be easy-ish. I had a hard time narrowing it down to only three--everything looked great!

The meatball sub was really good! It took over an hour, but an hour of that was just cooking the meatballs in the oven. The active stuff only took about 15-20 minutes.

Wow. The chickpea "bacon" is a revelation. Possibly my new favorite sandwich filling. The smokiness and texture of the chickpeas pairs divinely with the PB in the peanut butter banana bacon sandwiches. These sandwiches were delicious, filling, and easy. Instead of bananas, I used roasted plantains coated in a little chipotle powder. The plantains turned out a bit rough even after lots of roasting, so next time I'll probably use use plain ole' bananas. Mediterranean tempeh sandwiches are next!

I made the tempeh arugula caesar wraps for dinner tonight. Ryan & I both loved them. They didn't take much time to put together--the longest time was soaking the cashews & prepping the tempeh & letting it marinate. I think they'd be great wrapped tightly in saran wrap until lunch. It will definitely be in regular rotation.
