I'd love to know what your recommendations are for a really good Asian cookbook, more Chinese/ Vietnamese/ Thai rather than Indian recipes if possible.

I like the 30 Minute Vegan's Asian. It has recipes from all over Asia. There is a chapter for Indian, but there's also chapters for Chinese, Japanese, I think Thai, and one for everything else. Everything I've tried has turned out well, and they're easy recipes.
