The curry looks great, and is the perfect use for the Henry's tempeh (seriously, the best commercial tempeh I've ever had; sadly unavailable in the US) I asked my partner to bring me from his upcoming trip to Canada!

you can add some chunky veggies to the curry instead like broccoli, cauliflower or some beany meat balls.
