I have leftover "kitchen sink" from last night - that's what my friend calls cooking without a recipe with whatever vegetables are around. I haven't had the confidence to attempt this until recently. This batch has: onion, garlic, eggplant, zucchini, tomato, fresh corn, and VV steamed white seitan, drizzled with A-1 and pomegranate molasses. Not bad! Over millet.

Also, CHERRIES, half a blueberry muffin, and some almond butter maybe.

For tomorrow I packed a blackened tofu, sprout, lettuce, and sriracha'd vegenaise sandwich on tomato-basil bread. Add local raspberries and cherry tomatoes with roasted red pepper hummus and we have a meal!

First off: love this forum! Gives me so many ideas for lunch, dinner, breakfast which can sometimes be a challenge. I just bought Appetite for Reduction, I have PCOS as well, so I feel like this book was kinda made for me :)

For lunch today I packed a HUGE salad: green beans, carrots, baked tofu (AFR), red onion, red pepper, cherry tomatoes, and romaine with the green goddess dressing (seriously this stuff is amazing).

Can't wait to eat it in a couple of hours...

pearTree we have similar lunches! I also brought a salad with baked tofu, lots of roasted cauliflower, sweet potatoes, eggplant, and carrots.

Leftover Chard-dill-chickpea rice (from Vcon), leftover curry baked tofu and a little leftover roasted zuchinni. Only a banana, some raw carrots and some raw cucumeber for the rest of the day. Oh, and a tomato from my garden I picked this morning! Put a bit of salt and pepper on it, really good. Nothing like a fresh tomato!

man, that rice dish makes a TON. Will be eating it tomorrow, and probably once next week for leftovers as well. I need to do something to pick it up a bit though. I like it, but it is a little blah. Lots of sirracha of course. Maybe just some more tofu, I don't know.

Baked sweet potato with marinara and nutritional yeast, stuffed mushrooms, bell pepper, and banana for lunch. Smoothie for breakfast. Peanuts and raisins for snack. My lunchbox is so big at the beginning of the day, always amazed how empty it is by the time I'm going home.

A salad of purple cabbage, orange pepper, tempeh bacon and a lime dressing, plus a peach, an apple, a kiwi, homemade salsa and a few chips, and a larabar for taking to the gym.

I'm a big eater/snacker, and I can't believe some people I work with bring a tiny tv dinner for lunch and no snacks. I'd be absolutely famished, angry and non-productive if that were me.

Leftover primavera pasta from AFR, so simple and so delicious with all the farm fresh veggies, and a peach for dessert.

Paprikapapaya I totally know what you mean, all of my fellow co-workers bring the tiny lean cuisine crepe. It's gross, those meals are full of sodium and barely any "real food" at all, I also think it really affects their mood.

Give me large fresh meals over that junk any day!

Pita with tofu, lettuce, and bells, carrots, and 2 clementines.
Packed breakfast was a smoothie and snacks were a couple no-bake pb macaroons and some peanuts and dried cherries.
Already packed up for tomorrow. Lunch is pita with tofurkey sausage and lettuce, carrots, and clementines.
Breakfast is overnight oats with berries and protein powder and snack are more macaroons.

I'm really tired of spending $6 on salads from the food court next door on my work lunch breaks, so yesterday I made the AFR quinoa salad with black beans and toasted cumin seeds for my lunches this week. Really fresh and tasty and filling!

A coworker and I keep doing a once a week sandwich day from the local farm market. So tomorrow (can you tell I'm excited?!) I will have a wrap stuffed with pickles, spinach, red onions, lettuce, olives, cukes, banana peppers, sprouts, tomatoes, red peppers, housemade hot sauce, and roasted red pepper hummus. God, I really relish those sammich bites.

Homemade hummus (made with fresh chickpeas, so garlicky I am never going back to buying it!), whole wheat pita, cukes, peppers, and carrots along with a peach for dessert. Gotta enjoy the peaches while I still can.

I'm packing leftover pattypan squash gratin (with Cheezly!), that probably won't reheat so well but I'll just maybe eat it cold, an avocado that I'll eat on the bread at work with black pepper and red pepper flakes, and leftover tofu strips which were roasted in sesame oil and tamari.

Not strictly speaking "packed" because I work from home, but I made some lentil, quinoa & walnut burgers the other day & still have some of the mixture left, so I'm going to grill it on skewers & have them with coleslaw & some lime sour (cashew) cream. Yu-um.

Eats for tomorrow are packed.
Flatbread with avocado and tomato, chopped veggie salad, clementines.
