 Queso-dilla: Whole wheat tortillas filled with PPK cashew queso, black beans, roasted peppers. Quinoa-corn-baby kale pilaf on the side.  Homemade hummus plated with crackers (I was out of pita).  Minestrone Soup and lemon-pesto tofu scramble.  Peanut tempeh on a bed of mixed greens tossed in sesame dressing  Stir-fry with homemade seitan and stir-fry sauce with assorted veggies. Including kale. I've never used kale in a stir-fry before but it worked out pretty well! Then again, I always love kale.  Patriotic pancakes. I made this on the forth of July. The color scheme was not intentional. :)

Those pancakes look so incredibly gross, but I still want one. I hope you take this as a compliment, because it is!

Summer must be coming to an end because I really want that minestrone soup. Mm! And yes, kale is amazing in stir-fry.
