Homemade hummus sandwich, with avocado, lettuce, and cukes with watermelon and a peach for dessert...gotta have fruit for dessert.

I had leftover quiche from the Uncheese Cookbook, made with onion and steamed callaloo leaves, and a hash brown crust. corn on the cob and some leftover quinoa and beans on the side.

Packed up for tomorrow: salad with greens, cauliflower, carrots, celery, and kidney beans, piece of flatbread, 2 clementines.
Snack: homemade granola bar. Breakfast: overnight oats with cocoa and avocado.

I've been having the lentil eggplant chili from AFR all this week. I really really don't like eggplant and this has made it so palatable for me! Plus it's super filling and gets me through my day! Love AFR.

Packed up for tomorrow: pita with tofu and avocado, tomatoes to stuff inside once I eat it, apple, and carrots. Snacks/breakfast: cinnamon biscuit and breakfast cookie.

A wrap with sautéed peppers and onions, left over bbq'd veggie burger patty, quinoa, roasted ram and mango salsa. Delicious!

I've been making green sandwiches from Vegan Sandwiches Save the Day for work lunches all week. Guacamole, baby spinach and sprouts on green spinach and garlic bread rolls. It's been a good week! I also had a heap of pineapple left from making fried rice last night, so I took that to work as a snack.

Nice big salad - mixed lettuce, grated carrot, scallions, cherry tomatoes, chunks of strong sheese, avocado, chickpeas and croutons! With a Marks and Spencer dressing. Can't wait, had the same yesterday, it was delicious.

My husband and I have been making what is essentially a posh version of a pot noodle - nest of fine rice noodles, a bit of crumbled asian stock cube, finely ribboned veggies, some chopped aromatics (e.g. coriander leaf, chillies, garlic, spring onions, ginger), splash of soy sauce, small cubes of tofu, maybe a spoonful of peanut butter. When it comes to lunchtime, just pour on hot water, wait for the noodles to hydrate, then stir to combine. Can be varied depending on whats in the cupboard. (If the veggies need to be cooked, I microwave for a couple of minutes - but many things are fine al dente).

Quinoa chickpea pilaf from Veganomicon with kale and mushrooms. Seriously I had no idea this pilaf would be so tasty but it is! Such a gem that I will definitely be making more of during the winter months.

I stay at home, but I packed my sweetie a BBQ jackfruit and caramelized onions sandwich. I'll probably have a salad with avocado, walnuts, lime juice and olive oil, with lots of pepper on top. Or noodles with soy sauce, peanut butter, sriracha, and a scoop of awesome carrot/nappa cabbage slaw (made with a peanutty sauce, not mayo) swirled in for veg.

Had fajitas last night, leftovers should be yum! Made a bowl. Enough for a bowl tomorrow too!

Cuban Black Beans, some brown rice, soy curl fajitas with veggies (red onion, red bell, pastilla chilli) and some pico de gallo with avacado.

(those cuban black beans came out PERFECT. I should write up the recipe...somewhere. I don't have a blog)

I decided to take a weightlifiting class followed by a hip hop dance class tonight, so also have carrots, cucumbers, banana, some cantelope, an apple and a luna bar (for eating right before class). It's gonna be a tough 2 hour workout. I hope this enough food to fuel it.

Cake! I had cake for lunch. I made a chocolate cake with peanut butter frosting for a co-worker's birthday, and that's what I had for lunch. Mmm. No one said it had to be a healthy lunch, right? And bonus! He said it's the only cake he's had in ages that didn't give him nasty reflux. Score! (and you know, duh as well)

Lentils! Cooked with tons of ginger, garlic, onion and spices. Looks pretty gross, but tastes awesome. And since they are so healthy, I feel okay about eating a HUGE bowl of them! I like foods that I can eat in large quantities.

A mountain of chick cheeze from the Uncheese cookbook + some leftover caramelized onion hummus, with red bell pepper and cucumber sticks. I ate most of it with just a spoon though. Low carb, high delicious.
