fork yes I would eat that! There is nothing wrong with any of those layers.
But, if it were me I would do the brownie on the bottom, slather on the PB, then crumble the oreos on top of the PB, and then put the chocolate chip cookie dough on top. That's just how my brain works all that goodness out though. Either way it's all gonna taste amazing in my mouth!

Have you considered PB and Co peanut butter for this one? I said hells yes I would eat it, but I think Dark Chocolate or White Chocolate Wonderful would be better than regular PB.

Thanks for all the input! For the pb - I don't use straight pb swirled into brownies. It's more like the filling of a reese's pb cup. It seems a lot of people think it would be better without the pb though. What about caramel instead? Is it the pb in particular that you think wouldn't go, or is it just too much and shouldn't be replaced by anything else?
I like a lot of the ideas here, I'm going to have a think (and an experiment) and see. I need to keep it simple though, because when I make these orders I'm usually making 7-10 things (like layer cakes, dozens of cupcakes, petit fours, pies, etc) and I don't have time to put too much labor in. Cookie dough is a lot stiffer than brownie batter, so I'm not really sure how I would layer it on top of the brownies if it's going to be baked all together.

There is no such thing as "too over the top" or "too rich" when it comes to desserts. I'm a peanut hater, but I would gladly eat it if it was made with almond, cashew, or sunflower seed butter instead of the peanut butter. I also approve of the caramel option.

I think the reese's pb layer is the most amazing thing I've ever heard. I thought it was gonna be just straight pb layered in. But reese's pb is soooo much better!
Also, I see your point about cookie on the bottom pre-cooked. But I think post-cooked the brownie on the bottom would work better. I'm still willing to eat it anyway you figure it out though.
Speaking of your excellent baking skills, whatcha got that's gluten free?

Are you looking specifically for a bar with layers? Or could it be a different sort of dessert with the same flavours? I could see an oreo brownie with a small scoop of chocolate chip cookie dough on top and that scoop then covered with a layer of peanut butter buttercream type frosting. That wouldn't be super involved to produce but would look pretty impressive.

I was looking for a bar, just because it needs to be easy to transport/serve and bars can be individually wrapped. I will have a think on it.

I would probably eat it if the Oreos were broken apart and the cookie dough/brownie was the Oreo filling. But I'm weird and a traitor to vegan-kind because I like the cookie part of Oreos way better than the stuff inside.

Well, they're in the oven. I'm planning to take them with me when I go to watch Doctor Who with my sisters tomorrow night, so we'll see what they think. Swirling the peanut butter mixture into the brownies without disturbing the cookies underneath was a little more difficult than I had anticipated.
