I found the recipe and my mom made this mac 'n' cheese...or rather, rotini 'n' cheese. My little vegetarian/almost vegan sister has become a freak for Daiya, so this will be made a lot from now on. Recipe from http://www.theglutenfreevegan.com/2011/12/mac-cheese-vegan-and-gluten-free/.

On my birthday, my brother and I made a version of French Toast. I haven't made a good vegan French Toast batter, so we made grilled toast sandwiches. Local bread, Earth Balance, Tofutti cream cheese, & organic strawberries. Note the powdered sugar on top; it's called "class."

For my birthday dinner, my brother & his super-nice girlfriend made jackfruit barbecue pulled pork on top of toasted local bread. My mom made Coleslaw and Potato Salad, and her famous homemade pickles. Awesome dinner.

Vegan convenience food. This stuff's pretty good when you're jonesin' for the mac.

And finally, I woke up like a bum at 10 AM on Wednesday to my brother and his girlfriend making me brunch. FOR NO REASON. My family makes me actual food and I reciprocate by making them cupcakes/cookies/pie/other sugar-laden desserts. It's a win-win. These are Veganomicon Banana-Nut Waffles and Oregon Chai mixed with almond milk. Successful brunch.

Yeah, that mac n cheese looks awesome! And the pulled pork. I wish I had people cook for me...all I do is cook, share and then get stuck with dishes.

I had my first pulled pork jackfruit recently... really good!
