The soy curls I ordered from Food Fight arrived, so I made smoky curls and had them in the BLT Salad (I think that's the alternate name and the real name is something like Spinach, Tomato and Smoky Curl salad). In any event, this was my first time eating soy curls and I thought they were really yummy. The salad combo was great. I added onion and cucumber for extra vegginess.

I want to make the chocolate chip skillet pie for some friends who are helping us move tomorrow, but I already packed my cookbooks and I can't find the recipe online. Would anyone care to be wonderful and PM me the recipe?

molly wrote: If you guys have not made the peanut butter chocolate chunk ice cream you need to do so immediately. Oh I intend to. But replace "peanut butter" with "homemade pistachio butter". YES. I'm super excited about this. I finally made smoky curls, holy crepe they're good. Now I wish I had brought some for lunch today. There are so many things in this book I need to make. sometimes I just sit and flip through it and dream about opening an actual diner where such things are served...

Last time I tried to make they soy curls, they were just okay. I think it was the type of liquid smoke I used because this time I've eaten half the recipe just walking into the kitchen every couple of minutes and eating a few pieces. Yum! I still think I need a stronger smoke flavor, so I guess I'll make some more soon. Like tomorrow.

I made the Crispy Banana-Cinnamon Waffles, they came out very pancake like. My waffle maker hasn't been used in about 10 years, I bought it used it once and it's sat gathering dust ever since. The instruction booklet is incredible unhelpful regards time/temperature so I might need to experiment a little more. The waffles themselves were delicious, I toasted them and they crisp up on the outside which is how I imagine waffles should be.

I made a barbeque sandwich using soycurls rehydrated in water and a little soy sauce, the rough rider barbeque sauce and the sandwich slaw. This was my favorite version of a barbeque sandwich ever. So yum.

I LOVE that sauce. Especially combined with the Carolina-style barbecue sauce.

Maybe my tastebuds are shot, but I've made the smoky soy curls a few times and thought they just didn't have enough flavor. I might give them one more try and smother the soy curls in barbecue sauce after cooking.

I had to use twice the amount of liquid smoke to get a flavor I really liked. I used both hickory and applewood. And maple syrup, not agave.

Honestly, I have not read all 20+ pages in this topic, but from the few bits that I read, I'm so excited that everyone seems to be overwhelming enjoying this cookbook. Mine arrived a few days ago and the recipes are so drool-worthy! I can't wait to start making some recipes! The choc chip cookies and biscuits & gravy recipe are high on my to-do list.

I have found that different brands of liquid smoke add significantly different amounts of flavor. I've used one kind where more than a teaspoon would be ridiculously overpowering and another where you can add it by the tablespoon and still not taste it enough for my liking.

The applewood is very subtle, but gives a floral hint. I don't like mesquite, too strong whenever I've used it.

I just made the smoky scramble for dinner, and it is excellent. Lefties are going in bean burritos tomorrow with mango salsa and maybe cilantro pesto. it's really really really good, but it is gonna be killer with beans. MMmmM.

I love the smoky scramble too! There never seems to be leftovers though...funny 'bout that.
This thread has made me revisit Vegan Diner & remember why it's one of my favourite cookbooks.

My new neighbours gave me a bunch of blueberries the other day, so I made the Blueberry Nutmeg muffins in return. They were good, but VERY nutmeggy, which made me realize I'm not all that crazy about nutmeg. I think next time I might try replacing some of it with cinnamon.

I've made those and I just left the nutmeg out and they were still great.
