This is my first summer living in my newish place, and we are surrounded by fields and fields of organic corn. It's all I want to eat! Tonight (I get home from work at midnight) I'll have it roasted with a lemon-white balsamic, banana pepper sea salt, and olive oil marinade. I'll try to eat something else too, but I'll probably just want more corn.

Potato skins stuffed with cheddar daiya, salsa, vegan beef, and topped with tofutti sour cream. Plus a salad and some apple slices.

Spaghetti with seitan marinara and sauteed kale. And a big iced coffee.

I'm still hungry.

Jay made a seriously amazing pesto last night (I am so impressed. I left him a rough recipe but he winged it instead and it is SO MUCH BETTER than mine would have been), so we're thinking pesto-roasted fingerlings, a sliced tomato, basil, and Cheezly salad inspired by jdfunks/julialegume, and Bryanna's breast of tofu. Summer!

While I'm not living surrounded by corn fields, I do get some pretty amazing corn from the farmers' market. I can easily make an entire dinner out of corn on the cob when it's this good. Your marinade sounds spectacular!

aww! that sounds lovely! p.s. I've been planning on making something like this soon, speaking of corn: http://www.finecooking.com/recipes/riso ... ugula.aspx

Julialegume and I are moving stuff all day (clothes to donate, old books, fun stuff like that), so half-thoughts for dinner are either risotto or pasta e fagioli...

Made food for the parents + big sister: tabbouleh with chickpeas, muhammara and caramelized onion hummus.
It was superb. They were particularly crazy about the muhammara.

I'm thinking breaded tofu and vegetable fried rice is what's for dinner tonight.

I wish you all were feeding me. I'm bored, tired, and lazy, so I had a chocolate coconut soy protein shake.

Roasted zucchini and pasta. Easy and tasty. I love summer. But when fall arrives I'll replace summer squash with butternut.

Thanks to the pizza topping thread, I currently have two pizzas in the oven. I made cornmeal pizza crust & topped with homemade tomato sauce. One pizza is roasted fennel & potato, & will be topped with fresh rocket & blobs of homemade garlicky lemony aioli when it comes out of the oven, & the other one is a garlicky field mushroom pizza that I'm going to drizzle with homemade spinach & walnut pesto. I'm really preferring pizzas without any kind of cheese alternative these days. Hurry up pizzas - hungry NOW!

I roasted CSA stuff. Roasted corn, roasted fennel, roasted yellow beans, roasted onion and garlic. All doused in a healthy amount of delicious pesto. Blueberries for dessert. I shoved a few handfuls of salad greens in my mouth for something green.

Tonight will be sad. I will probably have toast at 1AM as I work until midnight.

Honestly I am going to cook dinner tonight. It will be shepherd's pie. I am not going to get lazy and have a linda Mc sausage sandwich again.

I made some lentil burgers and after some experimentation, they did indeed look like burgers. Gram flour, I love you.

Boring dinner tonight. Tofu scramble with avocado and a ton of mango-chipotle hot sauce. Then homemade French vanilla ice cream with strawberries!
