In case she doesn't see it : I'pm-ed Anek. (in my view she's our expert about Trieste)

I don't know much about the other eastern europe places you mention, but I guess it could be hard to find something there. Perhaps the happy cow app could help you.

Way too long! I'd pick two or three of those places, preferably ones that are close together. It'll be way more fun if you don't have to spend the whole time travelling.

Also, and I don't want to make narrowing it down even harder, but if you haven't been already Vienna & Budapest are amazing.

Great list, to do it properly without being on the road the whole time you'd need at least 3 weeks. I second what Jojo said, focus on 3 max 4 places, otherwise you'll just be on the train/in the car the whole time.

I'm originally from Trieste and I live in Munich, I've seen several of the cities you mention and honestly I would skip Trieste. So many better places in your list! You could do Munich - Salzburg - Vienna - Ljubljana and have an awesome time. In Munich there's a lot of nice things to see and good places to eat, Salzburg is just so pretty and Vienna is awesome for vegans. Ljubljana is a really really cool place, very young and vibrant. I haven't been there as a vegan but a lot of Eastern European food is already or can be easily made vegan.

Well yes, I'll obviously focus on three or four places; I mostly wanted to go to Bosnia (surprisingly, Happycow mentionned several places in Sarajevo -as well as in Zagreb) but it's quite far, and I have not seen any of the places that are on the way to it, so maybe I'd better just spend time in Munchen/Salzburg/Lubljana and go to Bosnia another time...
