I've made quite a few vegan pizzas now, & I've come to realise that the best way to approach it is to just forget about cheese alternatives altogether & just make it super tasty in its own right. I think this makes them more omni-friendly too. It's a big call, but these are two of the yummiest pizzas I've ever eaten - either with or without cheese. The pics don't really do them justice - there was a surprising amount of flavour packed into such simple pizzas. I made a cornmeal crust & a simple sauce from fresh tomatoes (peeled & cored) mixed with a little Italian herb blend & drizzled in olive oil. The first one is topped with red onion & mushrooms that I sauteed with garlic & balsamic vinegar, then when the pizza came out of the oven I topped it with big blobs of homemade lemony aioli & fresh rocket. The second pizza is topped with red onion, roasted fennel, & potato that I boiled in chunks, then tossed in garlic sauteed in olive oil. Once it was cooked I dressed it with homemade toasted walnut & spinach pesto & fresh rocket.

I like your idea of adding a sauce (aioli, pesto) after the pizza comes out of the oven. Both pizzas sound excellent!

Thanks everyone! The sauce just gives the pizza that moisture & cohesion that the cheese normally provides - & the extra richness & yummy flavour of course. I preferred these pizzas to ones I've made with cheesy sauce, cashew cream or grated cheeze. Now I just have to think up some more sauces! Balsamic glaze would be great, along with other types of pesto, or a roast garlic mayo, or a creamy eggplant type sauce.
And yes to potato on pizza! Who doesn't love a little carb-on-carb action?!

I love rocket on pizzas! I used to live across the road from Goodlife Pizza when I lived in Adelaide and they would sometimes have a special pizza with rocket on top. I've been meaning to recreate it at home for ages.
