I veganized couple of recipes from Nigella Lawson's cookbook "Kitchen" - here they are:

Mexican Lasagne (for this I made own version with "cheese" since vegan cheese is not easily available in Poland)

"My Mother's praised chicken" - not my Mother's and not chicken - TVP cutlets that are - anyway it was great

"African Drumsticks" - tofu subbed for chicken, mixture of soy sauce and tamarind paste for Worcestershire sauce + baked zucchinis

Chocolate Banana Muffins - easy to veganize - no milk required, soy yoghurt subbed for eggs
