That sounds like my mama's chili! It's definitely delicious but usually too much effort for this very lazy bachelorette.

i cooked a batch of chickpeas the other day for hummus, but then i got bummed out at the idea of having to wash the food processor, so i've been tossing chickpeas and cucumbers in a bowl and pouring tahini on top.

Gardein crispy tenders with melted cheddar daiya and lots of cholula. I need to do groceries.

The only thing missing from that meal is tater tots.

I made enchiladas. Corn tortillas stuffed with Tofurky crumbles, refried beans, and Daiya cheddar all smothered with chili gravy and topped with vegan sour cream. Yes.

Today I made Viva Vegan Arroz con Seitan. Yesterday was rice with wok made from random veggies I had laying around + cashews, pineapple (tinned), and a kecap manis based sauce.

Some of my favorites: Tater tots smothered with chili & Daiya. Veggie burger with baked sweet potato fries. Black beans tossed in a slow cooker, along with some salsa & water--serve with rice. Gardein chick'n cutlet with smashed potatoes.

Whhhhhaaaaaat? you guys haven't heard about dessert hummus' ?!

1 can of chickpeas drained and rinsed.
2 tablespoons of cashew butter (I just use 1 cause I eat the whole damn batch...)
1-2 Tablespoons of soya milk
1-2 teaspoons vanilla extract
2 Tablespoons of sweetener ( I use agave)

Whizz it all up in a food processor till smooth.
Stir in a handful of chocolate chips.

Ta daaaaaaa

You can also do other variations, adding in cocoa powder.. making an oatmeal raisin type one,
in which you just omit the chocolate chips and add in cinnamon and raisins instead.

The one I typed out is a recipe that is essentially from loads of blogs ive seen, except I tried to make it a smidge healthier.
check out chocolate covered katies blog :)

Ok so I did this last night with an extra tablespoon of peanut butter and a smidge of extra sugar. The food processor warmed it up a teeny bit so the chocolate chips melted when I stirred them in. ZOMFG. I'm trying really hard not to eat it all with a spoon for breakfast part two.

I imagine it's like eating cookie dough. Is it?

starrynight, it's very much like cookie dough. I call it cookie dough dip because dessert hummus sounds disgusting to me, like garlicky hummus with chocolate chips. I like to use coconut butter when I make it, unless I want the peanut butter taste.

my recent go-to is a microwave-baked potato with hummus and hemp seeds, and then some steamed broccoli on the side. Fast, cheap and seems healthy.

Just had a breakfast burrito with scrambled tofu, cheesy rice and salsa! Will have popcorn with salt and vinegar later.

That sounds perfect!

I had boil-in-a-bag white rice with chipotle Tabasco and cheddar "cheese" melted on top. Followed by a mug brownie.

I just made some ramen, with a pinch of red pepper flakes and a sprinkling of gomasio, and maybe about 1/2tsp of the flavor packet. It was quite good, actually.

A bundle of somen noodles with a tiny dab of peanut butter, a splash of soy sauce, sriracha, and the last little bit of pickled cabbage.

I'm thinking of making some boil-in-a-bag white rice (love this stuff. . . because, ya know, cooking normal rice is just too difficult) and topping it with a mountain of pickled okra that I bought at the farmers' market from questionably authentic "Amish" people. I had this the other night, and it was delicious. Probably with some hard cider, too.

i just ate two ears of corn for dinner, and i remembered as i was starting in on the second one that when i bought them, the lady who was checking me out picked them up, said, "aw, corn for one," and gave me a half-sad "you poor spinster" smile. i didn't say anything, but i was thinking, you know, what the hell, lady, there are two ears of corn there; i might have a friend. but now i know she saw right through me. or maybe she also keeps all her corn for herself and was trying to create a sense of corn-snarfing spinster unity.

HAAA that's hilarious! Although, also speaks to all my fears that cashiers judge me when I buy, say, seltzer, hummus, and a single potato.

I got one ear of corn in my veg box this week. I stared at it for a while, thinking 'what am I going to do with just one ear or corn?' Then I checked some of the other boxes if it was, indeed, just one ear for everyone. Sad.

On topic: stale bread. I can't finish the bread fast enough because it's just me.

Yesterday I had a toasted bagel with EB & nooch for breakfast and lunch, and the breakfast bowl from Hearty Vegan Meals for dinner. Brown food!
