Butternut Squash and Apple Soup (I may have botched the name of it) from AFR and slices of this super yummy garlic and rosemary artisan bread loaf I made this afternoon.

Tomorrow will be either left over soup, or, polishing off the Upside Down Lentil Shepherd's Pie (with Caulipots) from AFR that we had night before last.

An over the top sandwich. Toasted multigrain bread, veganaise, fried tofu, Boca chkn patty, coconut bacon, lettuce, tomato, fried beer battered dill pickle slices. Tots. Outrageous.

Mashed potato-cauliflower-spinach casserole, roasted oyster and black mushrooms, ginger roasted bok Choy, roasted beets with a cashew-jalapeno-lime-cilantro sauce. Realllyyy tasty. For desert: chocolate banana soft serve with these frozen cashew-chocolate fudge sticks.

Both came out great! I'm in love with the lemony chickpea dish. The sauce for the eggplant one made it yummy - usually I'm not a big eggplant fan.

Im making cheesy pasta supreme. It was a recipe a gal created while on the Eat to Live plan...made with quinoa pasta and tahini, nooch, shallots and garlic and 15 cups of kale! so delicious

Exciting! My favourite coworker brought Thai takeout over for games night, and it was really good! We had two different vegan curries (red and green), and spicy gingered/lemongrass tofu. I had my sticky rice with a bit of nuoc cham from World Vegan Feast that jdfunks and I made last night. I think I've only eaten Asian food for over a week straight and I am NOT complaining.
