I made the Summer Squash Soup tonight, using a pattypan squash and a globe zucchini...and red potatoes because that's what I had on hand. It's absolutely delicious and very filling.

update: made the thai summer squash soup. holy shiitake. very easy to make, and for such simple ingredients, it tastes PHENOMENAL. the only change i made was subbing celery seeds for the celery since i didn't have any, and i think it worked well.

Made the peanut pumpkin soup - mostly because I happened to have everything in my pantry already. Very yummy and rich. I am looking forward to making that summer squash soup now too!

Thanks to everyone recommending the summer squash soup! I made it today and it's great! I only puréed half of it, because I like my soups kinda chunky. I'll have to keep this recipe in mind for whenever I have some zucchini to use up. And, as I have some zucchini left over from his recipe, it's chocolate zucchini bread time! I don't think I've mentioned this recipe yet - it's another one I made from this book that has been great.

I made the Curried Cauliflower soup, it was pretty good. I used an immersion blender and thought if I had a regular blender it might have been smoother.

I forgot how lovely these recipes are. Made the cornmeal blueberry porridge for breakfast this morning - came together in 10 minutes and was a great start to the day.

I made the almond butter and strawberry sandwich for breakfast a few days ago, and that was a nice change of pace from my usual PB&J. Highly recommend!

Just made the blackberry breakfast bars, and they are incredible! I definitely think the fruit filling could be doubled. But they're seriously fantastic.

I was happy to get this book for 2.99 too! When it came out, I wanted it for two recipes that I saw in the index pages: blueberry corn pudding and sweet potato tacos.

I made the blueberry corn pudding this weekend. To me, it was more of a polenta than a pudding, so I welcomed myself to have it for breakfast. It was a nice change from oatmeal.

(My spellcheck doesn't recognize polenta and offers me "tadpole" instead.)

I love this cookbook. The mango saffron mousse is one of my favorite quick dessert recipes -- super healthy (fruits + silken tofu) but stupidly delicious. Reminds me of Indian mango ice cream (kulfi).

The black olive crostini with the cashew cream in this book is ridic. So so so good. Best cashew cream I have ever had, it must be the addition of miso and sauteed onions.
