Leftover cake. But it's cool because I'm eating butternut squash soup with extra veggies on the side first. And someone has to eat the cake, dammit.

dinner salad (green lettuce, arugula, and gardein) with baguette is the tenative plan... but it's looking a little drizzly out and that's feeling underwhelming. Hrmmm.... possibly making a soup to go along with it? (I found a golden borscht recipe that didn't sound appalling... maaaaybe I'll go with that, too!)

'Tis! There's a bit of info about it here.

Tonight I'm going to be lazy and get takeaway. BUT! I am excited because we're getting burritos from this place we used to love, but then it turned out that they were using butter in their rice and beans- but they've just changed that and now the vegetarian options are confirmed vegan. I seriously loved these stupid burritos so I'm so excited to be able to eat them again. I'm going to get one that's bigger than my head and it's going to be GREAT.

I lied! I made fried tofu tacos with spinach and tofutti sour cream with lime that were out of this forking world. Later, cake and coffee.

500 Vegan Recipes' Kale Tofu Spread and sliced heirloom tomatoes on garlic sourdough toast. Maybe some baby carrots. Kinda appetizery, I guess, but I don't want to go to the store!

Burrito with Tofulish's lentil/quinoa mush, roasted onions, red peppers and mango salsa with yam fries on the side. Easy peasy!

I made the zucchini & black bean tacos from AFR tonight (with a couple slight variations) and HOLY shiitake those were yummy!

Made a highly modified version of the eggplant and black eyed pea curry from the ppk blog. Basically turned it into an Italian stew. It was tasty!

I had bean curd skin rolls (fried yuba) with spicy curry sauce, a Chinese hot pot with three kinds of mushrooms, taro, and other veggies, and a turnip cake. It was takeout. I feel kind of nauseated, but the meal was satisfying after a ridiculously long day at work.

NOM! I just looooove Indonesian food. :) Had some myself last night. ;)

But tonight we're going Mexican as I have LOTS of corn on the cob and 2 avo's that need to be used up. Chili with guacamole, tortilla, cabbage slaw with avocado dressing and corn on the cob it is! :)

I'm thinking a brothy Northern-Thai style curry with eggplant, long beans, bamboo shoots, basil, chickin-seitan strips and fresh tofu with white rice. Ginger-mint-rum cocktail on the side.

Moroccan Chickpea Stew from the latest Weight Watchers cookbook with some fresh bread that we get as a part of our CSA. The stew was part of a big batch that I froze half of for a busy night.
