I would use E-Nergy egg replacer only because I think flax might make the dough sort of heavy.

You can use any sort of non dairy milk in most recipes that call for milk (in my experience).

Let us know how it turns out!

I agree about the egg replacer...but it's only one egg, so you can probably get away with other substitutes.

I would use soy or hemp milk for this....you're going to want the protein strands to help bind it so they don't crumble apart. I used to use rice milk on cakes and while the taste was the same, they'd crumble like crazy.

But for future reference, in case the veganized version leaves something to be desired, these are just pumpkin muffins, nothing special, that one egg is pretty negligible. You could replace it with applesauce, use soured soy instead of the milk called for, flax egg, or ener-g egg.
