I've lived a vegan life for 5 years without powdered egg replacer, but now I'm curious to try some out and I happen to have potato and tapioca flour right now.
What recipes have you had success with?
The most common on seems to be
Homemade Egg Replacer: 1 c. potato flour 3/4 c. tapioca flour (or starch, same thing) 2 tsp baking powder
And I'm planning on making that one unless anyone has one that works better.
Also the first one that comes up on google for me and has the largest number of search results on pinterest (from a non-veg site) calls for an extreme amount of baking powder and baking soda. How can that possibly not taste awful and why is that the number one recipe?

that's the proportion i use.
i rarely actually put it in anything. every once in a while i have a bread recipe that i think could benefit from it. any bread/cake that has applesauce or banana, i don't usually bother. but sometimes (pumpkin pie recipe, for instance) i think it makes a difference in the texture.

it's a bisque to find the potato, isn't it? i think it's worth trying. worse comes to worse you could always use it in some kind of deepfrying batter or something to get rid of it if it doesn't work out.

Do you own Simply Heavenly! ?? There are a bunch listed in there, and I would look them up for you... But I am in the middle of moving and I have no idea where that book is.
