today some packed snacks: trail mix, banana, apple, homemade lara bar tomorrow: fried rice, an orange, a green apple, carrots and peanut butter, and a granola bar

A vegan sausage roll that I picked up at a bakery yesterday along with a nectarine and some crackers/purple peppers for dipping in my work's hummus and tapenade. It is a momentous occasion when I actually pack something and don't only rely on bread and hummus at work.

I spent the weekend cooking and baking, so I actually got my act together this morning and will have: scallion potato pancake from AFR, tomato soup from Vegan Diner, a pumpkin muffin from VWAV and 2 pluots.
Very proud of myself.

Day 3 of roasted butternut squash and red lentil soup with homemade brown bread. Still looking forward to it, but need something different for tomorrow! Going to make AFR butternut and red kidney bean jamba stew for dinner tonight, so leftovers tomorrow.

I was lazy and couldn't really bothered this morning but I lucked out as there were some leftovers in the fridge. Roasted veg with bulgar wheat and spicy tempeh. I made a hummus sandwich as well to go with it, as there wasn't much salad left. I have also eaten the luna bar I was going to eat before I went to the gym later because I'm hungry. dammit.

I had a home made herb-bread roll filled with almond butter and piccalilli sitting in the fridge ready to take in the morning but I was hungry in the middle of the night so I had to make a replacement with non-herby roll. Still a good combination though. Also overnight oats and some Mornflakes chocolatey squares cereal.
For tomorrow I have overnight oats for brunch, and 3-bean and courgette stew, possibly with yet another bread roll.

I brought this Aunt Trudy's Spinach & Potato fillo sandwich to work today and I gotta say wow, it was pretty damn awesome for a frozen microwaved thing. The crust was still really crispy! (not even in the health food section) It says vegan right on the box. I got a samosa flavor too, I'm looking forward to trying it.

A carefree curry burger from the ppk blog! I made a huge pot of Eggplant Chickpea Curry and Cashew Cranberry Biryani from AFR this week, been eating it all week for lunches. While amazing, I wanted to eat the two dishes in a different form. Last night I substituted the Biryani for the brown rice in the Carefree Curry burger recipe and made a double batch of veggie burgers for future use.
I've made these burgers before and I must admit they are genius, totally yummy and perfect for someone like me who makes one large vat of curry every 2 weeks and wants something different. I equally love because the curry varies you get a different type of burger with each batch.
Yum yum yum...curry burgers.

I pan-fried last night's leftover gnocchi from Portobello (which is now smaller and cuter!) with minced garlic and a sliced no-cluck cutlet from Vegan Sandwiches. It was swell.

Veggie wrap in a sprouted grain tortilla with a simple white bean and roasted garlic spread. In a little bit I'll have some fruit, a mix of pineapple, honeydew, cantaloupe, strawberry, blueberry.

Quinoa/chickpea salad based on this recipe. Accidentally used white wine vinegar instead of balsamic, omitted kale and added carrots. Pretty good post-workout meal.
