Turnip cakes, sweet and sour soya balls, Buddha's feast, and sauteed broccoli with garlic and hot peppers. Half homemade, half procured elsewhere. All delicious.

Burrito bowl! Seriously starting to believe I could live off of burrito bowls for the rest of my life (which is good, because with school and work in full force I need a good recipe that takes very little time). Super easy, I've been making these forever:

Brown rice, black beans, any raw veggies I have around, juice of 1 lime, cilantro, avocado, salsa, cholula, and tortilla chips crumbled on top. Yum, the version I have been making this week has been esp. wonderful because I roasted a butternut squash on Saturday to add into bowls throughout the week.

Bowls bowls bowls. How I love thee.

Homemade "butter" "chicken" - I love it. There is no better way to use Gardein "lightly seasoned" scallopini. Healthy? No. Delicious? You betcha.

A smoothie with avocado, frozen banana, soy chocolate milk, and spiro-tein. This was absolutely forking delicious considering how little food I've had (yay no wisdom teeth).

Going to make the edamame pesto with linguine from AFR. Except I kept eating the pesto out of the container in the fridge after the gym every day this week (so good on pita chips), so I only have a small amount left

So I will make it like this:
Sautee some garlic, shallots or red onion
Add 1.5 cups of diced tomatoes and a spash of white wine
Cover and Cook down for 10 minutes
Add pesto, stir, then add linguine

I might add some beans for protein if I can find some in my fridge (like white beans). Might add some chopped spinach as well.

I made a similar sauce for a baked potato topping earlier this week and it was really good. I think it will be excellent on the pasta. I actually find just the pesto on the pasta a little to thick

(oh and sauteed mushrooms and add to my portion - my partner hates mushrooms)

I only have pasta about once a week. I am really looking forward to it tonight!
