 Post subject: Veganomicon recipe help!! Answer needed ASAP

Hi,

It's my 20th anniversary today and I'm making a special dinner. Dessert is the Caramel-Apple-Spice Cupcakes from Veganomicon. Unfortunately, though I searched high and low, I couldn't find the soymilk powder (or any vegan milk powder) which is needed for the Caramel-penuche frosting at Whole Foods last night. Can you guys suggest a substitute? Something that I might have on hand? I have soy flour, will that work? I also have confectioner's sugar and soymilk, but these are already on the ingredient list in the recipe, so I don't think they're what's needed. Any substitution suggestions of something other than milk powder that could work would be welcome!

I think I just left it out altogether - the icing was a bit runny but really delicious. Add a bit less liquid and you're probably fine!

The only place I could find it was on Amazon. I'm really surprised Whole Foods doesn't carry it.

Thanks! I was surprised too! If Whole Foods doesn't have it, I can't think of many brick and mortar stores that would. Maybe Surfas (a local restaurant supply store I have not been to) but I don't have the car today, so I can't get there in a reasonable amount of time.

So, I used less liquid but maybe I cut out too much, because I had to add more during the confectioner's sugar stage of the frosting. Then the frosting got a little too cool, and was a bit of a challenge to wrestle onto the cupcakes without breaking them. But I only ruined one, and slightly dinged one other. The batter made an extra cupcake, so I made the noble sacrifice of eating the one I had ruined before my husband got home. All's well that ends well!

I've always (successfully) used ground almonds for powdered soymilk because it's stupidly expensive.
