A bento full of leftovers :) Goodbye Bento #195Sweet beet salad, simple coleslaw with avocado dressing, couscous & chili, raw veggies (radish, capsicum) and two (yes 2) cashews. I also brought a banana-walnut muffin for coffee time 'cause there was going to be cake.

mix of potatoes, cabbage, peas, and carrots, a pear, some pan roasted chickpeas with nutritional yeast and garlic powder (so good), and an apple muffin with almond butter and fig butter tomorrow is more of the same salad, an apple, some carrots, and some protein bars

Leftover Thai Green Beans from AFR and some brown rice. I added tofu to it, but it was still a tiny lunch. I was still hungry.
surprise! lunch is catered at work today, and it is mexican food! I just made vegan nachos: Chips, tomatoes, onions, cilantro, guacamole, and 3 different salsas.
super full. Want more for later haha.

Today I made a veganized lunchable. Vegan cheese, turkey, and bologna slices cut into various shapes, ritz-type crackers, a juice box, and a whoopie pie. Not the healthiest, but it was a fun little lunch.

It was supposed to be AFR lasagna, but my coworker brought me in an amazing subji (beats! potatoes! carrots!) with homemade roti. So great!

Leftover pho! using the last of my Pacific Foods Pho Vegetarian base (and of course adding to it). Made sirracha glazed soy curls for the 'meat', veggies in the broth - carrots, mushrooms, baby carrots. and all the goodies to go with - bean sprouts, mint, basil, cilantro, fresh jalepenos, pickeled ginger, limes, and of course sirracha and garlic chilli sauce. I was not sure it would make good leftovers, but man it was BETTER! hard to eat with the crappy little plastic spoon though, I forgot to bring mine. Also quite messy. Toats worth it. I am bored so I took a picture.

Sandwich filled with homemade roasted red pepper hummus, basic baked tofu from AFR, lettuce and mustard...great combo! Along with pineapple and an asian pear for dessert.

Lentil carrot onion soup and a couple of sos-rolls. Soup makes the day and my sore throat slightly more bearable.
