Irish Nachos for dinner. with homemade pickled jalapenos on top

I made the TVP pepperoni last night in preparation for pizza tonight. It doesn't taste exactly like pepperoni (I think this has something to do with my liquid smoke's flavoring) but it's really, really good on pizza. And it was super easy to throw together. Now my husband has some pepperoni to eat with his Triscuits too.

I made the Denver Quiche and Creamy Polenta Chili Bake from Vegan Subs last night. They were both really good, but I was especially taken with the quiche! So easy and so good! I will definitely be making both again, and I think the quiche is perfect potluck fare.

I got some crappy, badly lit cell phone pictures of both, but I'm going to try to get better pictures of the leftovers today during daylight hours.

I don't have this book, so made it another Isa/Terry week. It's Vegan Brunch at our house!

We had the gingerbread waffles (with gingery blueberry sauce on top), the avocado potato salad, and the toasted coconut and mango muffins. We've also been invited to a brunch get-together this weekend, so maybe I will find something else new and tasty to take along....

I made my recipes.

1. Coconut Brulee Oatmeal - I really enjoyed this. It was creamy, but the oatmeal stayed firm. My only complaint is that the brown sugar didn't really brulee. Next time, I think I would use plain white sugar for the topping since I think that would melt more evenly.

2. Pina Colada French Toast - This was good too and easier to make than I thought considering that it has 3 components. The coconut flavor was very subtle though. As a coconut lover, I think I will either add coconut extract to the batter or sprinkle with toasted coconut next time to amp up the coconut taste.

3. Jalapeno Dogs - These came out well. I served them with salsa and nacho cheeze from the uncheese cookbook. My husband ate 3, so he obviously approved.

I really wanted to finish off with the cheese tortellini, but there's a city-wide Tofutti shortage at the moment! Devasted, but also slightly relieved that maybe the universe is just looking out for my waistline. I posted a wrap-up blog post here with an extra photo or two.
