I was all set to make spring rolls, but I went to the shop to buy some spring roll wrappers & there were none there! So I decided to make my own & was Googling recipes & came across one for egg rolls (which I don't think are a thing here in Australia - we have spring rolls & cold rolls) where you make really thin crepes & wrap the filling in those. It wasn't a vegan recipe, so I made my own from plain, chickpea & arrowroot flours, nutritional yeast, a little sesame oil, salt & water & they were SO much better than regular ol' spring roll wrappers. I always brush my spring rolls with oil & bake them in the oven rather than deep fry them, so that's what I did, & they were crispy & chewy & heavenly. Definitely be doing that from now on.

Potato leek soup that my sister froze for me. It looks really good, can't wait to dig in!

Wedding party rehearsal dinner! For an event in rural Alberta, my friend/the bride planned a pretty nice meal. Fried polenta, roasted summer veggies, caper-lemon sauce, roasted potatoes. And some sort of vegan dessert. Trivial vegan problem: I don't really like eating dessert, but when someone goes out of their way to cater to me I feel obligated to eat it.

For the actual wedding she got the baker to make six vegan cupcakes, and said "don't worry, they're ALL for you". My sub-nick is the truth, but it's so sweet of her!

the hubs and kid are having pancakes (blueberry for him) and i ate a bunch of tempeh and alternated it with cookie dough and cupcake batter.

vijita - that's so nice! i bet other people will want some though. it's like when i was pregan everytime a job i worked at ordered meat pizza they'd order 1 veggie for me and everyone would eat the veggie one and i'd be screwed. also, i wish i was sick of cupcakes.

Mad. I get fried potatoes for dinner.

Mom made chicken and assorted crepe for company. Nothing of course for us. She is eating potatoes and cauliflower (I won't eat cauliflower without sauce).

Also, because of the company, her insane paranoia about nobody else cleaning the kitchen properly, and things she is cooking, I can't go cook anything myself.

I am hungry, cranky, and getting over nasty period, and extra low iron dip. I do not want a stupid sandwich AGAIN.

Awww, that is awful! I wish I could send you a super fabulous vegan dinner! Hope you were able to find something okay to eat afterwards.

Tonight - I think we're having some kind of garlicky poppyseed pasta dish with cabbage and maybe beans. Whatever I've got in the fridge, basically.

Just potatoes. And wine.

buffalo soy curls, seasoned steamed broccoli, toasted sour dough bread and mac & cheeze!

It is like insanely hot here in southern california. Its almost 4pm, and my fiancee just informed me it is 104 degrees at our house. Stupid non-autumn-having california. I want roasted squash! Tofurkey Roast! Casseroles!

Instead we are having ceasar salad (AFR dressing. I could drink that stuff) with tomatoes, cucumbers, and avacado. Grilling up some tofu on my Foreman on the side. Maybe some eggplant too.

Seems like an ok hot weather dinner. Looking forward to it. Probably some cheap red wine that I put in the fridge to cool off a bit.

Yes, I know, as a wine snob I shouldn't do that but
1. its hot
2. its super cheap not very good wine, and it tastes better chilled and
3. many people agree that most red wines should actually be served at just below room temperature ~65 degress. I concur. Especially this swill. I am not below popping an ice cube in that mother to cool her down. And 'room temperature' in my condo is about 78 degrees right now, not 70.

78 degree cheap red wine is NOT the business.

Sausage rolls, purely so I can eat while watching Dexter and not be burdened by cutlery or having to look at what I'm doing.

Garlic mashed potatoes, spicy boca, and stuffing.

I'm think that baked spinach & "ricotta" stuffed shells in tomato & basil sauce is sounding really great for tonight. Last night I couldn't be bothered fussing around so whipped up a quick spinach & walnut pesto & tossed it through spaghetti.

PPK salt & pepper tofu, brown rice, and assorted stir-fried vegetables. The tofu was great, the veggies were meh. They were an afterthought.

pasta bolognese and green beans almondine. not bad.

Julialegume and I shared a ridiculous hotel restaurant hummus plate, as if there's any other kind. I had a glass of wine, too.

Two bowls of black bean soup and an avocado. Can't cook so I'm eating from the freezer.

AFR Arabian Lentil and Rice Soup. S(o)uper looking forward to it. Haw haw.

Jin gua mi fen (pumpkin rice noodles), stir fried water spinach with chili pepper, garlic, and ginger

Tonight? PHO!!

Yum, I still have one carton of the Pacific Brand Vegetarian Pho Base. It is good, and it was only $.99 each. (next time going to make the broth myself).

I plan on cooking some veggies in the broth: Carrots, baby corn and mushrooms.
Going to make some hot and sweet soy curls to put in there too.
Lots of cilantro, mint, basil, mung bean sprouts and jalepenos to go with. And of course chilli garlic sauce, Sirracha and tamari.

Also some Goyza from TJ's on the side.

Tonight will probably be roasted brussel sprouts, broccoli and a baked potato with hummus. Not terribly exciting.

Tomorrow though, my roommate and I have plans to make spicy mushroom/black bean/potato quesadillas with cashew queso. Pretty stoked!

Frozen "butter peas" (which taste basically like kind of dry lima beans) with earth balance and soy sauce. While listening to the Nitty Gritty Dirt Band. It's like dinners at home when my mom was away and dad and I had to feed ourselves. Nom.

Mashed potatoes, stuffing, Boca patty with the spicy stuff removed and replaced with my own breading, broccoli and zucchini, and gravy. So much gravy.

I got a little carried away with roasting squash the other day, so tonight I made a big pot of soup with 4 different kinds of squash. Yum. Oatmeal pumpkin chocolate chip cookies for dessert.

Deconstructed Banh Mi Salad from Quick Fix Vegan if I ever make it to the store. Otherwise? Who knows. Maybe pasta with Esme's sauce.
