In an effort to prepare lunch and dinners for the whole week I spent Sunday making:

Eggplant and Chickpea Curry (AFR) with Cashew Cranberry Biryani (AFR again) for lunches.
Nicoise Salad from AFR with a double-batch of Green Goddess Dressing for the salad and bowls for dinner.
Homemade Hummus

I got everything all lined up, even steamed the potatoes and green beans for the salads throughout the week. Since it's just me I usually get by with 3 recipes to mix and match throughout the week.

Red Lentil and Cauliflower Curry (from Vcon-last night), brown rice and seared broccoli. I haven't made this in forever! it was so good, and many leftovers for the week

Ancho Lentil Tacos with cabbage slaw and mexican millet

Minestrone Soup (new from Low Cal Comfort food). Dental work on Tuesday. will need soup :(

Chickpea curry with lemon garlic green beans

Plain ole pasta with TJ's marinara sauce. Roasted broccoli and cauliflower on the side. Also TJ's meatleass meatballs (this is my SuperFastIHaveBeenAtTheGymForTwoHoursMustEatNOW 15 minute dinner)

We are going to a 2 day concert on Friday and Saturday so will be out of town. Plan to run to the store and make a big lunch on Friday before we leave. Probably tacos or something. Going to make blueberry cornmeal pancakes on Saturday since we are staying with friends as a thank-you.

My new menu is up! As I said last week, it runs from Thurs - Thurs so I'll just list my meals from today on (even though we had some awesome seitan piccata from V'con last night).

Today: red lentil – cauliflower curry with leftover roasted carrots for lack of parsnip (p.186 V’con) -thanks Chicky!-, cumin spiced quick bread (p.267 La Dolce Vegan) for the Dutch vegan society forums cookalong and some extra simple veggies on the side, like braised escarole/cabbage, corn on the cob and/or escarole salad.

Mediterranean Monday: Briami (p.56 A Vegan Taste of Greece), Turkish bulgar with chickpeas (freezer stash) and lemony cucumber salad.

Asian Tuesday: cabbage ramen/noodles (double recipe) and teriyaki tofu with leek or (vegan) egg roll. Maybe sautéed escarole with leftover smoky tempeh marinade.

Fusion Wednesday: roti with tofu and chickpea salad (p.82 Vegan Taste of Greece) with raw escarole.

Thursday: pesto pasta with Savoy cabbage (with pesto from a jar), Puy lentil salad with beet (and pine nuts, leftover smoky tempeh or bread croutons instead of cheese).

Maybe I'll swap TUE and WED: Fusion Tuesday sounds better, doesn't it? ;P
Anyway, I get to try a load of new recipes this week!

I'm going away next week, but I am planning on making a few things for my house-sitter. Hot and sour soup, mint melty cookies from ED&BV, hard cider barbecue sauce and jerk sauce (I'm actually making these in a huge batch to bring with me for my friend/family), lemon poppyseed muffins, and maybe some other freezeable casserole. Or pizza dough that she can use.

Sounds yummiful, everyone!

I was too busy this weekend doing other things to cook and now I'm home I'm too pooped to prepare anything but this week I'm making a yummy bowl/test recipe (like a dragon bowl, sort of thing) and cashew shittake druken broth stew from Chloe's Kitchen. Quickie things, especially since I'm stuck cooking during the week this week but it should all be very yummy.

Everything from Quick-Fix Vegan this week because I don't use this book enough and it is good for lazy people, like myself!
Monday: Barbecue Pinto-portobello Sandwiches, with coleslaw and corn on the cob
Tuesday: Deconstructed Bahn-Mi Salad and baguette
Thursday: Muffuletta pizza, served with a side salad of some sort

The other nights my boyfriend is cooking or I have plans with friends. It's pretty nice having someone to share cooking responsibilities with.

Since our Saturday shopping trip, I've already done a lot of cooking, but this is what's on deck:

- pizza dough (made some for the freezer)
- Saturday night - homemade calzones with tempeh sausage crumbles, escarole and other things
- Sunday night - pasta with a sauce I make all the time, seitan sausage, and homemade focaccia
- Monday - tempeh reubens!
- Tuesday - takeout...
- Wednesday - taco night
- Thursday - pumpkin soup (the bf's mom sent some over)
- Friday - leftovers

So this week I planned out way too many recipes to make just for little old me, after getting back from the grocery store had to seriously cut down the list of things I was gonna make and still manage to use up all the produce I bought. These recipes/choices made the cut:

Breakfasts: Lower fat Banana Bread from V'con
Dinners: Mango BBQ beans and BroccoPlots both from AFR, made it for Saturday and have 2 dinners left out of it.
Burrito Fixings - Black beans, roasted butternut squash, avocados etc. for dinner
Lunches: Care-Free Curry Burgers with fruit and maybe some burrito fixings for later in the week if I get bored of burger lunches (but I probably won't).

Next weekend I will definitely not plan on making 5+ meals...just simply cannot all get eaten within the week.

-baked Island black bean burgers over salad (Isa Does It tester)
-Vietnamese salad rolls with smokey tofu & seitan with peanut sauce
-OMG baked onion rings
-Pasta e fagioli
-Clean-out-the-fridge pizzas (corn, hot peppers, smokey tofu, marinara, etc.) with tahini-lemon dressed side salads
-lemongrass & veggie stir fry, since I have lemongrass and some fresh bamboo in my fridge...

I'm going to try SO HARD to not buy any more produce since Julia and I are going out of town on Friday.

- Lettuce soup, leftovers lentil-beetroot salad and Greek chickpea salad, bakeoff bread
- Seitan stroganoff and Greek minty bulgar with leek
- Dal Tarka with cauliflower (possibly peas) and roasted butternut squash with coriander seeds from Veganomicon, basmati rice and (prefab) papadums. Maybe some mint dip
- Patisson soup and casserole with potato mash, leftover sautéed cabbage & roasted pepper, blue ‘sheese’ and a nutty crumble on top
- Stuffed courgette, Greek fennel-avocado salad, bakeoff bread
Sometime during the week I also hope to make some roasted pepper houmous.

Sunday: salad with orange segments and slivered almonds, veganyumyum gnocchi with thyme viagerette and cashew cream sauce, garlicky brocolli rabe. Maybe baked donuts for dessert.

During the week:
-its-getting-late-and-im-getting-lazy Mandarin chkn bites over steamed veggies.
-taco salad
-baked tempeh, baked sweet potatoe, shredded garlicky brussel sprouts
-snobby lentil joes and home baked fries, steamed broccoli
-date at Vedge, even though I just went there for dinner tonight!

I have to cook after work today as I couldnt get to it yesterday. Making:

A Seitan stew type test recipe for Isa.

A sammich recipe for same. I'm using some home-made foccacia I froze for these. Better if focca was fresh but it's not been frozen long so should still be good.

Peanut butter cookies from Vive Le Vegan!

I'll probably make all this while watching Dancing With The Stars All Stars! in the background.

Lettuce soup?!?!?! Please explain!

Here is my menu for the week. Its going to be super hot this week, hence salad 2X and Pho (pho is actually good hot or cold weather food, its so easy to prepare. I think soup is good in hot weather. I know, weird.)

-Baked Potatos, Fresh corn and squash saute (my recipe) and BBQ soy curls (last night. very yum)
-Ceasar Salad (AFR dressing) and grilled tofu. Maybe bread.
-Taco Salad, Tamale pie
-Pho and Goyza dumplings
-Tortilla Soup
-Pasta with spicy peanut sauce, tofu, broccoli and carrots

Today I made a tester recipe - a yummy pot pie.

I also made the beans, greens and broccoli with miso with black rice pasta noodles from AFR. Yum! Never made it before.

I have enough leftovers of these two dishes to last me midweek with the pasta and probably until Friday or Saturday with the pot pie.

Later this week, I have the fixings for the spicy blue potato and pinto bean salad from AFR (but I have to use red potatoes becuase I couldn't find blue). I've made that recipe several times and I love it. That can be my lunch later in the week when I run out of leftovers of the AFR noodle, greens and beans dish.

Last night I prepped sandwiches to put in my partner's lunchbox all week, as well as two quiches for him. One frozen for next week, and one to eat this week for breakfasts. His are NV, but I'm going to find a good freezable vegan one for me and the kids. (Usually we have oatmeal/fruit/cereal for breakfasts.)

The rest of the week:

Bagel melts - Daiya, tomato, pesto
Tofu Katsu Musubi from the Wholly Vegan blog, prob with fruit and veggies on the side
Thai curry and rice
Dragon Bowl - using tempeh and whatever leftover veggies we've got in the fridge

It's getting cold, so I think more curries on the menu for next week!

This week I am doing the challange with 3 new isa/terri recipes. I love those challanges!

-Butternut and kidney bean stew (or whatever its called from AFR)
-Baked potatoes with baked tofu cutlets (or lazynight chickenless tenders) and an asparagus/shallot/mushroom/sun dried tomato sautee thingy
-Butternut pasta (from the PPK blog) with roasted lemon garlic broccoli
-Chipotle chilli with brussel sprouts + sweet potato drop biscuts (from AFR)
-Thai Green beans (with tofu added to make it a full meal)
-Tamales (frozen made a shitton last week) with cuban black beans on the side. Oooh and some fried plantains!

I have a friend coming over for dinner now on Friday. Not sure which of these to serve. Not tamales since we are going to a mexican place on saturday night. Either the chilli or the pasta I think. (he is omni. of course. 100% of my friends are)

This week I made:

Quinoa black bean burgers, winged this one and am happy with the results! Going to be lunches this week.
Garlicky Hummus for snacks and sandwich spread.
Green Goddess Dressing to go on bowls, and salads for dinners.
Large batch of cinnamon steel cut oatmeal for packed breakfasts.

So happy to manage a menu of super simple food for this week!
