Tonight I made the Portobello Po'Boys, with a side of Horseradish Potato Salad from Vegan Diner. The portobellos were so good, crunchy and delicious. Chickpea Shawarma tomorrow!

I am enjoying a beet and barley burger for lunch. Tatsy! I love beets so this is perfect for me. Side of cabbage and welcome fall.

So far I've made the no-moo seitan, the no-cluck cutlets and the Salvadorian bean and seitan sandwich. The seitan recipes are my new favorites, loved the texture and the taste! The sandwiches were also really great, I added avocado and salsa to mine. This book is already a favorite of mine!

I made the Almo-cado Sanwiches. They have almond butter, beets, avocado, microgreens, and sprouts. I'll say this: that's one colorful sandwich!
Well, I made them for lunches, and I usually have to eat at my desk. These are really not "desk" sandwiches! I made a mess yesterday. Today I had a beets/avocado/greens/sprouts salad with an almond butter sandwich on the side...
The shredded beets have a very light dressing and are good. I love the orange Muscat champagne vinegar on the avocado (available at Trader Joe's for about $2.50). That really does make the flavor pop, as promised in the recipe notes. So I'm also glad I have a fun new ingredient to try things with.

Made the Country Sausage Sandwiches for dinner a couple nights ago. They were amazingly delicious, and I made extra for the next day's lunch. My husband said they need to be in regular rotation. Served with a side of cantaloupe.

I made the peanut butter brownie sandwiches tonight for a potluck tomorrow. I am hoping they are delicious but am not hungry at all to try one. Perhaps breakfast.

Just ate the Asian Eggplant sandwich for lunch. This is my favorite so far - perfect balance of flavors and textures. I added a few fresh basil leaves as I assembled the sandwich - good addition. Also, Celine just posted a revised peanut butter banana bacon sandwich recipe, with more smoky chickpeas. I shared the view that the smokiness of the chickpeas got lost in the peanut butter and banana, so I can't wait to try this version: http://havecakewilltravel.com/

mmmm. we just had the KFC sammies last night. soo good! (even though i didn't have the soy flour and the mustard powder)
i am guessing the stiffness of the cutlets was because i subbed more chickpea flour for the soy flour, so i'll have to do it again correctly. they were still really tasty. i might have to pull out the tortilla press for those though. boy, i needed an extra set of hands to roll those bad boys.
we had a lot of extra batter left over, so next time i'll make it thicker, or add less milk. (i also used mesa sunrise cereal. ha! i needed more than 1 1/2 cup of it. the last cutlet was juuuuuuust barely covered.)

Would it be possible to substitute soy curls for the jackfruit in the carnitas recipe? Sweden hasn't discovered jackfruit yet.

Believe it or not, but I've never worked with soy curls before. Let me look into how those are usually prepared so that I can tell you if it is possible to adapt the recipe with those, and if yes, how. Be back in a few.

Who's awesome? Efcliz is awesome. So Love Child, I looked into it with Tami who's used Soy Curls maybe once or twice, and we've come to the conclusion that we're not really sure. If I ever get a chance to play around with those for that carnitas recipe, I will try it and let you know. I'd just hate for you to waste time and money on something that's not guaranteed to yield great results.

And jackfruit kinda exists in Sweden. Just completely randomly an d unreliably. Never seen it in my city (only the sweet syrupy ones and very rarely at that) but I saw young jackfruit in a Thai shop when visiting a small town. I had intended to go back and buy a tin (didn't feel like carrying it all day) but forgot...

The sun dried tomatoes they call for - moist, vacuum packed but not in oil - I can't seem to find anything like this. Is there a specific brand? Can I just soak regular ones before using?

Yes, you can just soak and drain. I just finished mine, but I think the brand might be something like "Sun Gold"? They are on my grocery list, so I'll update it if it's something else.

The sun-dried tomatoes from TJ's Tzippy mentions are the ones I always use. They're kinda cheap too, from what I remember.
