As a new vegan and someone who doesn't have a ton of time to make his lunch, I was wondering if I could get some info one sandwiches and such that are hearty (I can eat a lot), and will stay good overnight in a fridge or whatever. I know the obvious peanut butter sandwich. Thanks!

Make up quinoa and whatever beans at the start of the week and mix with salad. Each morning pop into a tortilla wrap and put some guacamole on it. Should fill you up nicely.

Hummus is a great filling for a sandwich or a pita!

Also burritos are a good idea. If you want something hearty especially, fill it up with beans and/or rice.

Both of those are super easy options for someone new to being vegan, and are made with ingredients you are probably already familiar with. You can buy store-bought hummus and beans from the store and then add your own veggies. Lots of stores now (like trader joes) have some pretty good already baked/flavored tofu that you can add for protein. Also there are some good lunch-meat alternatives out there as well, like Tofurkey.

We also have a massive thread about packed lunches that might inspire you.

My advice is make a good dinner and bring leftovers to work/school with you! That's what I do 90% of the time. I just grab my tupperware with leftovers and some fruit/snacks and I am out the door.

@mollyjade... That spreadsheet is EPIC.

I have nothing else to add. I just eat leftovers or bean salads for lunch!

Very quick & easy - chickpea "egg" salad is great on a sandwich. http://www.buddinglotusbody.com/nourish ... -sandwich/

I normally make a double batch of dinner and have the leftovers for lunch the next day. If I don't fancy that I'll make soup, or just eat cereal and milk.

eh, i guess i'm a bit lazier, i'd rather in the same ol boring lunch almost everyday, and be able to have last night's dinner leftovers for dinner tonight. sometimes it's hard to whip up a from scratch meal every night after work.
