I'm not sure how I managed this since i can barely move my upper body, but I made a delicious hash-thingy that consisted of seitan, kidney beans, shredded potatoes, caramelized onions and cabbage, bell pepper and garlic, that I spiced up with chili powder, cumin, garlic powder, paprika, worcestershire sauce, soy sauce, ketchup, lime juice, liquid smoke and puréed chipotles in adobo. Had it with pineapple salsa, mustard/mayo sauce and avocado. Hadn't eaten since breakfast so I was pretty hungry,

Originally planned on making Italian broccoli rabe and seitan hoagies with garlic fries but I don't have seitan or hoagie rolls, so I think I will make baked potatoes, tofu nuggets with maybe a tartar sauce, and sauteed brocolli rabe.

We're recreating a pizza from Dimo's in Chicago: marinara, Upton's Italian crumbles, teese, green peppers and hot peppers - with the bonus of sliced olives and spinach.

Roasted butternut squash, gimme lean sausage, and arugula rigatoni with some flavor of sauce made with Miyoko's gruyere. I'll probably wash it down with a beer.

Are pancakes with maple caramel & strawberries dinner? Because that's what I want! I also have some nice fresh lepinja & was thinking of cooking up some soy-tan cutlets & making a nice sandwich with salad & homemade mayo.

Stuffing cutlets (stuffing, hummus, corn, and gravy mixed together, fried with breading), brussels sprouts and onion, fries, and biscuits.

I got home late and was craving mac and cheese, but I'm too tired to put any effort into it. While the pasta was cooking, I tossed into the food processor: a can of white beans, garlic, onion, sea salt, fresh pepper, oil, Earth Balance, tamari, nutritional yeast, lemon juice and soy milk. It tastes so good. I don't remember exactly what sharp cheddar tastes like, but to my mind, this tastes like a sharp cheddar cheese sauce.

Rainbow Dragon Bowls with peppers and broccoli and beets and sprouts on top of a bed of a quinoa-rice blend with chickpea cutlets and the best sauce ever (Dragon Sauce, hence the name "Dragon Bowl"). So delicious.

Pita pizza with homemade tomato sauce, peppers, onion, TJ soy chorizo and a "cheesy" sauce. I'm hoping it tastes as good as it does in my head haha

My brother is in town visiting, so I'm veganising his favourite meal- Thai green chicken curry. Using the recipe from Terry's Vegan Eats World, and using vegan 'chicken' in place of tofu. Also the strawberry chocolate pie from Vegan Diner for dessert.

Was feeling lazy. Did a quick quinoa dish involving peanut butter and random veggies. Accidentally added significantly more cayenne pepper than intended (I was trying to add a small shake but ended up with approx 1-1 quinoa to pepper ratio). Still not hot enough.
