I had a disappointing day re. work yesterday, when a project fell through, so immediately thought of pancakes! I used the recipe for oat pancakes from American Vegan Kitchen but found them to have way too much baking powder & salt in them, so adjusted the mixture somewhat. They were okay in the end - I do like the idea of including the oats. I made a salted maple-caramel sauce without using a recipe & it turned out great. I was tempted to add some orange zest, & it also would have been great with toasted walnuts. It's just some Soyatoo canned whip on top because I didn't have any cashew cream handy. Altogether, pancakes saved the day & helped me to feel a little less demoralised.

Sorry to hear work was crepe. Pancakes do really make any day seem that bit better. Hence why I have them every single day before work!
