I'm so happy it's salad weather once again, & daylight saving starts tomorrow - yay! I really want one of those veg curlers so I don't have to grate my beetroot... The cutlet is "soy-tan" that I rolled out super-duper thin & coated in a spicy wholegrain crumb. Salad just has a simple balsamic vinegar, agave & EVOO dressing. And a healthy shake of nooch.

Thank you! Here's the recipe http://tinyurl.com/8c6k93b (that just links to a Google Books page) it's from 1000 Vegan Recipes. It's just a quick, easy seitan recipe that contains a fairly high ratio of tofu. It's just all blended together in the food processor & is really easy to form into nice thin cutlets that are then just pan-fried without any pre-cooking. The texture is firm & chewy, but not rubbery at all. It's quite a versatile recipe. I changed the seasoning to suit myself (I only used 1 tablespoon of light soy sauce & replaced the rest with water). So far I've cooked it plain & crumbed. Leftovers are good cut in strips for a stir-fry. I was thinking of rolling some kind of stuffing up in the seitan dough, cutting them into individual sized roulades, then pan-frying them & baking in the oven in some kind of sauce. I might try that next!

wow. this is my new favorite easy seitan recipe. Just made it tonight (breaded with whole wheat bread crumbs, almond meal, nooch, and seasonings then pan fried with a bunch of slivered almonds) with mashed cauliflower and gravy and roasted brussel sprouts. so easy and really hit the comfort food spot. thanks for that! I had no idea that recipe existed, now the book is on my wishlist!

I too am buying this book on the strength of the seitan recipe. I love the sound of your meal with the delicious sides - yum! I made some with more of a "beefy" type seasoning (marmite, a little tomato paste) & cut it in strips & put it in a Thai style salad with peanuts, lime, coriander, chillies, cucumber, etc. It was perfect for lunchtime.
