I only really like eggplant if its cooked down till its sort of gooey, similar to the indian and asian dishes mentioned here...and of course baba ganoush

If you have the "Simply Heavenly" cookbook make the eggplant lasagna. You will love eggplant forever after that.
Everyone we've ever served this to, vegan or omni, has LOVED that recipe. And there is tofu in it...

I was clearly talking rubbish. I've had a chickpea bake and a ratatouille, and they were both delicious. I've been depriving myself all these years for no reason at all!

So, what else have I been missing I wonder?!

I'm going to look up the simply heavenly lasagne for a start...

My husband just got us 8 giant eggplants. What the fizzle to do? Ah, must revive this thread.

I want to try eggplant bacon and try out all the yummy recipes!

I grew ichiban eggplants this year in my garden even though I don't really like them. It actually turned out pretty well!

Things I made:

Cut into 1/4 inch rounds then breaded them with an 'egg' mixture made from energ eggs (you could use water), a little bit of nayonaise, & balsamic vinegar. Then I baked them, and they were good like that but then I layered them with tomato sauce & cashew ricotta for eggplant parm.

I also grilled them then made babaganoush w/ a can of chickpeas.

Finally, I made eggplant rollatinis - sliced them thin longways, grilled, then spread with oatmeal mozzarella (any cheeze would work) and wayfare bacon bits (tempeh or seitan sausage crumbles would be good too) and rolled them. Placed them on top of a pile of grilled tomato slices and put basil on top. Yum.

(There's been a second time since then, which involved slicing it super-thin and layering it into lasagna.)

I always liked the idea of ratatouille, but I really hate peppers and onions, so I made up my own dump-a-bunch-of-eggplanty-stuff-over-pasta dish and people totally love it. I just eyeball the amounts, but basically you heat up olive oil, add garlic, then pine nuts, then eggplant, then zucchini; sauté all that for a while then add a can or two of pasta-ready tomatoes and some black olives and let it simmer, covered, for a while. I add salt to taste at the end.

Poorly cooked eggplant is an awful, awful, awful thing.

For my tastes, eggplant needs to be *completely* soft, smooth, transparent and silky. Any chewy white bits and I'm out, completely. I really like it sweated or roasted. But it's so delicious when it's done right!

I once nearly choked on grilled eggplant. The skin was like dangling from my teeth down into my lungs. That happened 4 years ago. Yesterday I finally cooked with it again. Even though it tastes real good I am still nervous eating the Eggplant and chickpea curry from AFR.

My partner hated eggplant until we made this.

Now he really likes it baked/roasted. Especially eggplant bacon. Or the fusilli roasted vegetable recipe in AFR, but use eggplants!
