Anyone have a good chili Mac recipe that doesn't call for vegan cheese products? We're trying not to buy anything and just cook out of the pantry. I have some awesome chili, but want to stretch it with some chili Mac. All the ones I've found online call for Daiya. Thanks!

Do you have a cheezy sauce recipe that you like? I would just add that to the chili mac.

I have a few recipes for chili mac and none of them call for cheeze or cheeze sauce. They're simply chili and macaroni.

I've never followed a recipe. I just mix whatever chili and whatever cheezy sauce together. You could also just add a bunch of nooch to some chili and mix it in with pasta.

Thanks guys. I guess I'm not enough of a chili Mac fan to have realized it's just a mish mash of different things. I might try ctate's queso without the salsa that I add (we don't have rotel here) and add that to it. I love that stuff. Super pantry friendly.

Oh, I assumed you were just looking for queso since you mentioned already having chili. Um... there probably are recipes from the ground up, but I really think any pantry cheese sauce you like will work.

The Chili Mac recipe in Fresh from the Vegan Slow Cooker has options for either Daiya or a homemade cashew/nooch sauce.

There is a recipe in Vegan on the Cheap that I've been wanting to try. It's based on the idea that you eat chili on day one, mac&cheeze on day two and chili mac on day three (not necessarily three consecutive days). I think you can use any chili and/or mac&cheese you like.

That sounds really good! For chili mac I always just do chili over macaroni - never really thought of using cheese - will definitely try next time.

When I make chili mac, I just add chili (homemade or canned) to a pot of mac & cheese. This works best with creamy mac & cheese recipes like the one in Vegan Diner.

Yet another reason I need to get that book. I'm waiting to get Vegan Diner and the Artisan Vegan Cheese book when I make a trip to an English bookstore. I had the biscuits and gravy from vegan diner recently and it was SO delicious.
