I'm looking forward to this week! I've had this book for ages but haven't really made much from it.

I can't decide what to make this week. I have the original version of YRR and I don't have much left to cook from it.

I've had this book forever but it's not one of those ones that I reach for when I'm looking for a recipe. So it's perfect for a cookbook challenge! I made three recipes last night- the simple sweet potatoes, sesame green beans, and the star of the show, mustard-crusted seitan. I attempted this seitan when I first got the book a couple of years ago, and it went down in history as one of my biggest kitchen disasters ever. It was the first time I'd tried to make simmered seitan, and it was a horrible, brainy mess. But I added the mustard and panko coating and fried it up anyway. The coating tasted good, but the texture of the whole thing was so awful that I never tried to make it again, until last night. I'm glad I went back to it (now that I've learned how to simmer seitan properly), because it was great! I used some seitan from the freezer, and I had the whole meal done in under an hour (it would have been under half an hour if it weren't for the potatoes roasting). It looked and tasted like it took way longer. I'll definitely revist the recipe in future! The beans and potatoes were also great. Roasted sweet potatoes are my favourite food in the world, so they were always going to be good. The beans were a surprise, they were super flavourful and even Boyfriend commented on how good they were (he usually reluctantly picks at green beans). They were perfect side dishes and I'll totally make them again.

Tonight I made the black bean soup and it was great! I ended up adding half a can of fire-roasted tomatoes, which was not in the recipe but added a little more awesome awesomeness. This soup is a little thinner than what I typically prefer, but I realized whilst eating that the extra liquid is delicious when soaked up by pieces of bread or croutons. :) I will absolutely make this again.

I completely forgot to talk about the braised cauliflower here! I made it a couple of nights ago. I usually roast my cauliflower, so I was a bit hesitant, but I needed a vegetable and I needed to get dinner on the table fast. This worked really well, and it tasted great. I ended up tossing it with some nooch, and it was delicious.

I made the taco salad for dinner yesterday. I've actually never had proper taco salad before (really), and I really liked it. I talked about it a bit more on my blog.
