 Post subject: What should i cook with leftover cream of mushroom soup?

Today I am making the creamy mushroom fettucine pasta from AFR, which calls for two cups of portobello mushroom soup. So, I will have leftover cream of mushroom soup (yay!). Other than make the same dish again with the rest, or just eating it *as* soup, any ideas what I can make with it? I think it would be good to thicken up and us kind of like those omni boughten "cooking cremes", you know, kind of like the Isa recipe has you do, but different ideas? Thank you!

You could pour it over seitan or something along with some celery, carrots, and onion and pop it in the oven. I made something like that once and it was really nice.

My mom used to make a (very non-vegan) wild rice/chicken, and broccoli casserole with cans of Campbell's cream of mushroom soup - try something similar? If I could find vegan cream of mushroom soup in Vancouver this would be first on my list of childhood favourites to veganize! I think tofu or tempeh or seitan would all work in place of the chicken.

Cream of mushroom soup screams out "casseroles" to me. The previous poster mentioned Campbell's... maybe take some of their classic recipes and veganize them? I just looked at their website and there's a barley soup recipe that could easily be veganized if you sub out the dairy ingredients. I bet you could also do something like the previous poster described with rice and seitan chunks instead of chicken.

These ideas are sounding good! mel b and limone, one day, when I have time, I will crack the vegan code on some of those soup casseroles! There is that 'new' Campbell's cooking cream sauce, there is even a vegetarian one, but not vegan, and it looks kind of lind a plain mushroom soup type of medium, no mushrooms. One day I am going to see what they suggest that for on the website, and do something vegan mushroom-creamy like it! EmporerTomatoKetchup, yeah, green bean cassrole! Thanks! It is Thanksgiving here now, so d'oh! To me for not having thought of it, but it is a real contender. Obviously, I do not find myself with the leftover cream of mushroom soup dilemma very often, and these ideas help!
