 Post subject: Bringing food to class (another one of those threads)

Tomorrow is my night to bring snacks for class - I live nearly 4 hours from campus, so it's got to be very, very portable. Also, I have a ton of homework to do today - so no time to bake. Everything is going to have to be more or less ready to go straight from the grocery store.

So far, I'm thinking chips, salsa and guacamole. I need some additional ideas to round out the offering, but my brain just won't engage and fill in the blanks. What else would go with?

fresh fruit?

do you have time to bake? i make the choc chip cookies from 'vegan dinner' often and it is not time consuming to whip up a batch and pop the tray in the oven.

Can you get olives and pickled or marinated vegetables from your grocery store? Those would go well with the pita and hummus.

Some grocery stores carry these snack-packs with pre-sliced apples and a little cup of peanut butter. That's something you could easily put together at home, but if you literally have no time it's a good snack option. I second the idea of getting some olives or marinated veggies. You can even take it a step further and buy the marinated veggies, plus a couple pieces of bread or a roll and some veggie cold cuts slices, pack 'em separate and put together a little sandwich once you're ready to eat so the bread doesn't get soggy.

Sangria!

I like hummus because it has some protein in it. If you wanted to keep a latinish theme you could maybe find a black bean hummus.

You would have to keep it cold somehow (thermos?) but I like to make a dip with soygurt + nayonnaise + penzey's horseradish dip mix.

Do you have a Trader Joe's you can stop at? They have lots of snacky type vegan food there that would be easy to bring in. Much better selection than a regular grocery store. I often stop there when I go wine tasting with a group and have to grab picnic stuff (i.e. no time to prepare either!!!)

pita chips/pita break
Tortilla chips
So so so many different hummus and salsas
Also pre-cut up carrot sticks and celery sticks
also some decent bruchetta type spreads
Tons of sweet snacks - peanut butter pretzels, Joe Joes, snickerdoodles, etc
Lots of pre-cut fruit as well for decent prices

and wine. Oops it's school. you can bring me the wine.

I thought of going to Trader Joes, there is one closeish to campus (in NY they don't sell wine in grocery stores though, sorry Chicki!). I ended up getting guacamole, salsa, chips, pineapple, carrots, and cookies from the store. I have a little cooler that I can take everything in and it's one less thing for me to worry about tomorrow.

Thanks all for your suggestions!

I wish I did have time to bake, I SO would have made margarita cupcakes or tres leches cake.
