does anyone know of a recipe that closely mimics store bought chikn patties? or even chicken breasts? without using gardein or some other prepackaged faux meat. i've got a bag of gluten ready to roll.
i'm really craving a chikn style burger, but i'm coming up short for recipes.

I really love the chickpea cutlets in the veganomican't. To me, they taste like chick'n cutlets when made. Especially with mustard sauce!

you can't really do a commercial-style chikn patty with gluten; most store-bought patties use processed/textured soy. i have a dream about pressing yuba and tvp together in exactly the right way and ending up with something just like a gardenburger chik'n grill patty, but so far it is only a dream. bryanna clark grogan's soy and seitan turkey is my favorite chikn experience in terms of its texture. the recipe makes a giant loaf, but i imagine it could be fashioned into patties and cooked for a shorter time; you would have to play around with it a little. the white seitan from viva vegan would probably make a good burger, but it won't be like a store-bought patty.

Have you tried the seitan cutlets in Vcon? I like to use chicken-style broth for the cooking liquid, like the Edward & Sons bouillon cubes, and add a bit of sage and thyme.

there are also some chicken style seitan cutlets in yellow rose recipes and also on joanna's site, i think. they aren't the same as store bought, but they are still really good.

I noticed in the food porn section that someone made some breaded seitan cutlets that kinda looked like chicken viewtopic.php?f=31&t=23246She has a link to the recipe in there too. maybe if you did thin seitan cutlets then breaded them they would be chicken patty-ish?

I don't really find the chickpea cutlets to mimic the chicken patty. They lack breading and don't really taste chickeny, IMO. If I were to try it at home, I'd probably just go with marinated, breaded and fried slabs of tofu. But honestly, those Gardein chicken tenders and Boca chicken patties are the bees knees. Just had the spicy Boca chicken last night, actually with chipotle mayo, jalapenos, lettuce & tomato. junk food vegan.

I really like the chickpea cutlets for a "chicken" taste, but I think that's more because I associate the herbs and seasonings that are in the chickpea cutlets with chicken, not so much the texture or anything like that.

Hooray! I really like the texture of these. The Bryanna recipe that acr recommended is also really good. I think the inclusion of tofu in seitan just gives a really nice dense, chewy but tender texture.

The Boca chikn patties were pretty much my one junky processed indulgence when we lived in the States! Here we can't get them.
It's not really the same, but the cornmeal crusted tofu in Vcon always kind of reminds me of fried chicken, in a way. And it is gluten-free. I make it in little triangles which you could imagine are like chicken nuggets, but it might work in bigger patties/portions too.

I've made variations on Vegan Dad's "boneless chickenless hot wings" a few times (without the fake chicken stock, using veg or mushroom stock instead) and they always turn out sexy. White pepper and mace seem to give things a slight chickeny flavour. I've made breast-like things (ie bigger lumps) using that recipe as a base.
