My bodybuilder friend is omni and told me about his disasters with protein muffins. He suspects he has a gluten sensitivity and so I said I would try to come up with a recipe for him. Vegan, of course. His requirements are:
- no butters/margarines - nuts and 'good' oils okay - no sugar (as in what you get in a packet) but fruits okay (he says dates are fine) - no banana - gluten free - high protein (as high as possible)
These have to be firm enough to eat on the go, like in the car, but not cardboardy.
What high-in-protein ingredients would you throw in?
I really want these to taste good, because he and I used to eat the same omni body builder way. 'cept I'm now vegan and want to plant those veganny seeds in his brain and make him see he doesn't need animal protein.
I'm thinking tofu, soy flour (? I've never used it), buckwheat flour, quinoa flour, protein powder, an oat topping, chia, flax (flax egg), appplesauce binder, date paste, nuts/nut butters ... not necessarily all together though :)

a few weeks ago i was investigating this for the kid's lunchbox. i took this recipe http://southerninlaw.blogspot.com.br/20 ... althy.htmland also tried her brownie recipe they were both good, if a bit crumbly; they were both heavy on the peanut, which again for me is OK.

If you can get it easily, using peanut flour in place of some of the other flours in a muffin recipe would up the protein content and (most likely) taste pretty good.

I do quite a lot of low carb baking. My go to mix for muffins and sweet breads is equal parts of: - soy flour/protein powder - ground flax - ground almonds/ground walnuts/shredded coconut - wheat bran - vital wheat gluten Obviously, the wheat bran and gluten are out for you. You could experiment with stuff like quinoa flakes, oatbran, oatmeal or oatflour etc. You should be able to make some pretty good muffins that way. I use stevia for sweetness, but I'm sure date-sugar or something similar would work too. Instead of oil, you could use nut butters. If you'd like them to be low GI I wouldn't put dates in as they're high. What about sweetening with applesauce, rice syrup or agave, & for protein, almond meal, quinoa, amaranth, nooch, soy or chickpea flour. Oats also lower the GI too. What about almond muffins with dried cherries or apricots?
