as long as I can find escarole, I'm making escarole & chickpeas in white wine broth from the test kitchen (even though I think the escarole will freak my girlfriend out) over mashed potatoes.

Vegetable soup, recycled into Shepherd's Pie. I made a huge pot of soup and I didn't want to waste any, but I'm tired of veggie soup after 3 days of it. I made a gravy with the broth, used all the veggies and topped it with garlic mashed potatoes.

I had a tasteless guacamole/vegetable wrap, fries, and a shared goma ae salad. Lesson learned, even when you are dead tired, the food at the overpriced crappy pub in our neighbourhood is still not going to have improved in taste/quality.

roasted tomatoes, chickpeas, and hot peppers with plenty of garlic...maybe over pizza dough. I'm trying to clean out our fridge before heading on travels next week (and all I want is pizza).
