I just ended up eating a salad. Squash tomorrow instead!

channa masala with so many local hot peppers and the rest of the tomatoes, served over sprouted brown rice. clean out the fridge continues...

Last night I had potato chips, baguette and hummus, and quinoa salad. Um...not so amazing.

Tonight! Queso blanco with kale chips, beans, rice, and avocado from the test kitchen.

You'd be welcome to have dinner here. Tonight we've got carrot bisque with hummus and sweet pickle sandwiches.

Tonight, make-your-own-pizza night at MIL's house. She is super vegan-friendly. There will probably be Daiya. Yay for not having to cook!

Husband and self are required to eat either dahl or veggie korma that we made this week in much-too-large quantities. Mandatory Indian leftovers.

I was planning on just eating leftover soup, but my boyfriend requested we try something new where he eats at least one vegetable during one meal each day. He survives (and apparently thrives) on a diet of mostly pasta for dinner, poptarts or bagels for breakfast, and pasta of some sort for lunch as well. Sometimes he eats faux meats. So this is exciting and awesome. He already likes brussels sprouts, spinach, and broccoli, but that's the extent of his vegetable preferences.
So! Dinner! Roasted brussels sprouts, roasted butternut squash, and maybe a rice dish of some sort.

so awesome, sisterlegume! my spouse used to survive in the same way your boyfriend does (he was a potatoes-corn-taquito-pizza-mcdonald's chicken nuggets ((((shudder)))) kinda guy). eventually he branched and i bet your boyfriend will even more eventually. yippeeeee for the veggieful dinner together!

tonight we're having creamy-roasted garlic-tomato soup with grilled cheezes. w00t!

Leftover pizza and rice.

My pizza-streak has been postponed to continue tomorrow, since we had a super duper early dinner of take out tostada for me and tofu nacho for Julialegume from Los Gorditos.

Feeling bleh, and touchy stomach all week, so I'm having toast and Cointreau laced hot rice milk cocoa.

Queso blanco was postponed due to an extremely emotionally exhausting day, but I had some teriyaki tofu, salad, and rice, and tomorrow we shall have queso. Oh and I'm eating Parma out of the container right now. On nothing.

Yesterday I had homemade pizza with cashew ricotta, garden tomatoes, mushrooms, and caramelized onions. And tonight I'm having leftovers.

Pizza night! (Homemade pizza). I'm thinking white pizza.

I'm not sure what to call it - Greengrocers Pie? It's a vegetable version of Fishermans Pie.

All the pizza love on this page makes me want pizza, but instead I'm having sloppy joes and roasted brussels sprouts.

Sloppy joes sounds like a great idea.

I'm trying to see if I have the energy to go grocery shopping. If I go, I can get myself a hazelnut soy latte...

Isa's test kitchen has so many lovely sounding things, but I've had a touchy stomach/ulcer pain issues all week. So I'm in that limbo between hungry and afraid to eat. Not helping me pick something for dinner.

Pizza idea: make focaccia, slice it in half, pile on a romesco sauce (Isa has one on the blog), top with tofu ricotta, roasted cauliflower, red onion, and basil. I had that last weekend.

Oh, fun appetizer. We got four Japanese eggplants from the CSA so I roasted them and made a baba ganoush-hummus-hybrid dip with lots of garlic, lemon, and a roasted hot chile.

Spinach and artichoke dip while we watch football. I kind of want to try eating it over tots but laziness prohibits that right now. Maybe i'll try it with the leftovers.

Chili fries, baked breaded mushroom bites, roasted green beans and garlic with tarragon and mustard

Leftovers: golden crispy tofu (http://vegandad.blogspot.com/2011/04/go ... -tofu.html but baked instead of fried), roasted cauliflower, and harvest grain pilaf (Trader Joe's)

Soup made with potatoes, white beans, daiya cheddar, and spinach.

Stuffed crust pizza with super garlicked-out, red wine marinara, melty mozz. from AVC, Upton's seitan and steamed sausage crumbles, diced green pepper and pickled black jalapeno. AND a spicy mimosa-type thing.
