Cookbook Challenge - Week 6 - Vegan Sandwiches Save the Day

Oops, a day late but here's the thread for Vegan Sandwiches Save the Day by Tamasin Noyes and Celine Steen.
If you don't have access to any of the cookbooks, you may also choose an alternate book, just remember to post all your results here.

Choose 3 or more recipes from the selected cookbook of the week and tell us about it! Post pictures, comments or anything else you can think of here. If you choose to switch books around and do this cookbook on a different week, feel free to come back and post in this thread anytime.

Well I got my weeks mixed up with Vegan Diner so I'm happy to report that I've already made 3 things!

Pav Bhaji - Very tasty, although next time I will use a bit more crushed tomatoes so the filling it a bit more “sloppier.” In case you are wondering, since the recipe title is a bit exotic, the filling of the sandwich contains potato, cauliflower, red onion, red bell pepper, garlic, fresh ginger, tumeric, garam masala, crushed tomatoes, green peas, salt.

Puff Pastry Pot Pie Sandwiches (hot dang, this was awesome!!!) Instead of making the “no cluck cutlets” I substituted about 7 ounces of extra firm tofu. It was fun serving the “filling” over puff pastry, but next time I’ll probably just serve it over some from-scratch biscuits or hearty bread.

Super yummy humus-like spread that accompanies the ratatouille sandwich (page 102)

So all in all, these 3 recipes came out great. I look forward to seeing what others make and I definitely plan to dip back into this cookbook soon to make some more stuff!

has anyone else made anything yummy from the cookbook? i'm surprised there aren't more pics....

I don't check often enough, but I've made two things this week from this book, coincidentally.
The Pittsburgh Steak Sandwiches and the Curried Lentil Wraps. Both amazing, but sadly no pictures.

I tested for this cookbook, but since it is the cookbook for PPK Cookbook Challenge this week, I wanted to remake some of these great sandwiches. I noticed that there aren't a lot of pics, yet, and since the week is almost over, I figured it would be nice to have some more!
