what (relatively simple, tasty things) can i do with tomatillos?

make salsa verde. it's really easy and great on enchiladas or with chips or really any Mexican dish.

Yes, salsa verde, or a green tomatillo sauce. All are pretty similar, some call for roasting first. There is a nice roasted tomatillo salsa and sauce recipe in Viva Vegan if you have it. Or just do an internet search if you don't.

I think there might be a green posole (a soup) in Viva Vegan that calls for tomatillos as well.

Is there anything else to do with them besides salsa verde or tomatillo salsa? I've already made so many jars of that this summer and they are still producing. Though I'm not complaining, these are delicious options.

Well, you can use the salsa verde to make chilaquiles! Those are easy. Just fry up some corn tortilla bits (and maybe a little crumbled tofu) and add the salsa verde and optionally any other sauces you want.

I had good cactus and tomatillo tamales once, but they were store bought and it's not exactly a simple thing to make.

i grow tomatillos and wish i could do something other than eat them raw!! i am totally a sucker for a raw tomatillo.
