Hey everyone. I'm co-catering a big fundraiser in Toronto (Animals Beyond Borders for those interested). I'm looking to make 4 desserts that are pretty easy to make, transport, assemble, as there's not a lot of time to physically set up the location and the food as well.

So far I was thinking:
1- apple and pear crumble
2- raw date truffles
3- brownies with some intense topping (cashew whip? caramel/dulce de leche)

Any other ideas?

how about cupcakes? for me, those never get boring - you could pipe on the icing right there.

might be a good time for those pumpkin brownies (those ones with the layer of pumpkin on top).

when i need to bring a dessert and don't have time to fool around, i usually make the Vcon (VWAV? cant remember) lemon/coconut bundt cake, either with limes or lemons [both ways are awesome]. the cake is so rich that everyone is always saying "this can't be vegan".
or, if not, the lower fat chocolate bundt with a sprinkle of cinnamon and powdered sugar on top is another good one. those bundt cakes are really amazing and everyone seems to love them - more importantly, easy peasy.
