So, just a general question, but supposing I want to make bagels for tomorrow's breakfast, could I hold them in the fridge overnight and boil + bake tomorrow? At what point would I stop to let them sit in the fridge? I want to make Manifest Vegan's Jalapeno Cheddar bagels and don't want them to get hard by the time morning comes.

I would not hold these in the fridge overnight. The dough will not be strong enough to stay up that long! You could boil bake and freeze...

I tried it anyway since I haven't checked this since a few days after making the batch... they're fine :) maybe it's just the super awesome recipe or something... but they're still pretty good.
