I've misplaced my copy of VWAV, but 3 cups of water seems like a lot. TVP is usually rehydrated with a 1:1 ratio of water to tvp. Maybe try 1 cup of water and add more if it seems too dry.

I googled the recipe and it looks like the idea is that the TVP and water and spices and such is brought to a boil, then simmered for 10 minutes, then sitting for another 20 for the water to absorb, so I don't think three cups of water is a ludicrous amount. But, you can always start with less and add more if you need to.

Yeah, with that different cooking process, I'd trust the recipe. 1:1 is done when pouring boiling water over the dry TVP to rehydrate.

yes, the veggie chorizo was quite impressive. i've personally never had chorizo before, but my hubby has, and he said isa's recipe was right on and was really really pleased with how the vegan version came out :) the only thing he did was add a wee bit of extra salt and some hot sauce to his personal portion. i ate mine as prepared, and loved it just fine.
in the future, i think rather than eating it on its own as a side dish, we'll probably use it as filling for tacos or enchilladas and add other stuff to it. but it's pretty darn tasty :)

This stuff is great. I won't have to buy it store bought again. I take it and make chorizo cube in ice trays and then freezer bag it. I normally put this in a scramble or use it in smaller amounts and that is the perfect way to have it handy in the amount needed.
