 Sorry for the crappy dark pic, it was 8 PM and dinner needed to be served. I admire those that have the willpower to light box and arrange their food just so on a empty stomach... So the Memphis burger is pulled pork, crunchy onion string, bbq sauce and a patty. I redid it by using pulled jack fruit, a Gardein patty and Just Pure Foods onion strips! It was a winner. I LOVE your fast food posts! I'm glad someone veganized this thing because it needed to be done. Even after 3.5 years as a vegan I've not tried jackfruit...

I am new to jackfruit - only started using it this year. I like it because it is cheap and gluten free for those who are GF (most pulled mock meats contain wheat). I think what turns people off from using it is all the directions online saying it needs to cook in a crock pot or be pressed and other stuff. Honestly I get the jackfruit out of the can after draining it, pull it apart with my fingers, coat it in sauce and heat it a pan for a few minutes...The first time I tried it I cooked it on the stove top for over an hour and the results are just the same as pan frying it....

Yes! I only wish I could locate the appropriate jackfruit; I've given up.
And I'm with you on the not-so-great food pics. Usually when I cook I'm starving, so if I want a picture it's of the snap-and-go variety.

I would have never thought to veganize this because the Carl's Jr. commercials really gross me out. Your version looks awesome though.
