I was craving some lemongrass tofu tacos from our local banh mi truck, but those jerks weren't at food truck Wednesday. So I took matters into my own hands.  Seared/lightly fried tofu in a lemongrass marinade, homemade daikon and carrot pickle, jalapeno, cucumber, cilantro, and a soyrachanaise sauce, all tucked inside street style corn tortillas. I'm convinced that anything tastes better in a tiny tortilla. I totally inhaled these.

The marinade is lemongrass (two stalks, interior parts only), about four big cloves of garlic, soy sauce, a splash of rice vinegar, maybe 1 tsp sugar max, a little sesame oil, and salt and white pepper to taste, blended in my Vitamix. I sliced firm tofu and seared it unseasoned on both side in an iron skilled rubbed with a bit of oil, let it cool, then stuck the slices in the marinade.
